Honey Balsamic Chicken & Brussels sprouts

Honey Balsamic Chicken & Brussels Sprouts. Think all the goodness of a sweet yet tangy glazed chicken and sprouts dish on a bed of creamy mashed cauliflower. I think you guys know by now how much I LOVE Brussels sprouts so I’m totally obsessed with this dish. And we’ve told you before but we’ll definitely tell you again, you need to try mashed cauliflower if you’re also a fan of cauliflower like me !! A perfectly healthy and colorful dinner to start the week !!

We hope you guys all had a great valentine’s day weekend, we surely did! Friday, my mom and I went shopping for food and flowers. Then we made our adorable heart shaped soft pretzels. Later I went out with some friends for dinner and drinks in the city…super fun! Saturday we had our traditional family Valentine’s Day dinner and gift exchange. It was a very nice, relaxing yet also super fun night! Finally on Valentine’s Day my mom and I did brunch with some festive mimosas and later I went out to dinner at my new favorite restaurant in the city for a Galenitne’s celebration. Seriously, if you guys are in the Philly area you need to try Double Knot if you haven’t already. The food, cocktails, bar, atmosphere….I LOVED it all.

However, now that all the hype of Valentine’s Day is over, I am kind of thinking spring…maybe even summer. Too soon?? I know it’s a little early, but the days are getting longer and I am crossing my fingers and toes that the snow in the north east is (almost) over.

I don’t know what it is about this chicken and Brussels sprout dish but it has me thinking spring. It’s super colorful, has lots of fresh flavors, and just feels springy to me. And aside from the fact that it’s got me in my spring time mood, it is also super delicious. Lemony, tangy, sweet all in one big bite. And the creamy mashed cauliflower, well that speaks for itself, especially if you’re a cauliflower lover like me!

Ingredients

For the Chicken

  • 1 pound boneless chicken breasts; cut into pieces

  • 2 tablespoons olive oil

  • salt and pepper

  • 1/2 cup balsamic vinegar

  • 1/4 cup honey

  • 1 tablespoon dijon mustard

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/4 teaspoon red pepper flakes

  • 12 ounces brussels sprouts; chopped

  • 1 lemon; juiced

  • fresh basil and arugula

For the Mashed Cauliflower

  • 2 heads cauliflower florets

  • 4 ounces cream cheese

  • 4 tablespoons butter

  • salt and pepper

Directions

  1. Heat the olive oil in a large skillet. Add the chicken. Season with salt and pepper. Cook until the chicken starts to brown.

  2. Meanwhile in a separate bowl. Mix the balsamic, honey, dijon. oregano, thyme, and red pepper flakes. Pour the mixture over the chicken in the skillet. Cook until the sauce start to thicken. Add the brussels sprouts. Cook until they start to brown. Drizzling with lemon juice and remove from heat.

  3. Meanwhile, make the mashed cauliflower. Add the cauliflower to a large pot of salted water. Cook until tender, about 15 minutes. Drain and transfer to the bowl of a food processor. Add the cream cheese, butter, salt, and pepper. Process until smooth.

  4. Serve chicken and brussels sprouts over mashed cauliflower. Top with fresh basil and arugula. Enjoy!
