Tomato Salad

This appetizer is so fun and there are so many things you can do with it! We love to make tomato salad on summer Sundays and sip some white or rose wine! The ingredients are simple and takes about 5-10 minutes to prepare!

We change this recipe up from time to time adding mozzarella cheese balls into the salad rather than having the cheese on the side. We also sometimes use parsley and basil mixed while other times we only use basil. Either way this one is super good and super easy!

Our favorite preparation for this dish is using fresh Roma tomatoes which are always so much better in the summer months! We dice them, put them in a bowl, and chop up some fresh basil and parsley to combine with the tomatoes. Next mix all those ingredients with some olive oil. Lastly, we add water, a little at a time, to get a good consistency then sprinkle in some salt and pepper!

We like to serve this salad with fresh mozzarella or burrata on the side and a fresh bread either franchaise or sour dough!

This tomato salad recipe has been in our family forever, and it still never gets old! Let us know what you think!


a.     Ingredients:

  • 3-4 Roma tomatoes; chopped

  • 1/3 cup of extra virgin olive oil

  • ½ cup of mixed basil and parsley; chopped

  • Salt and pepper to taste

  • 1-2 cloves of garlic; minced or sliced (optional)

  • ¼ cup of water

  • Balsamic vinegar (optional)


b.     Directions:

  1. Add all ingredients except salt, pepper, and water to medium sized serving bowl and mix together

  2. Add water a little at a time until consistency is good; add salt and pepper to taste (at this point you may drizzle with balsamic)

  3. Serve with Tuscan bread or crostini with fresh mozzarella on the size
