Burrata with Oven Roasted Tomatoes
The perfect Sunday summer appetizer has been found! This delicious and simple appetizer dish is refreshing and delicious and great for a Sunday night before dinner. We made this dish on a Sunday after a weekend well spent at the beach, and we were very pleased by the delicious flavors of the roasted tomatoes mixed with the herbs and olive oil.
We served the roasted tomatoes with fresh burrata and Hudson Bread Company’s Franchaise bread. Feel free to use fresh mozzarella if you prefer and whichever bread is your favorite! Whatever you choose, you cannot go wrong with this dish! It is most definitely Sunday recovery life saver!
a. Ingredients:
10 oz of cherry tomatoes
¼ cup of extra virgin olive oil
¼ cup of mixed fresh thyme and fresh oregano leaves
10 fresh basil leaves; torn
Salt and pepper to taste
8 oz of fresh burrata
b. Directions:
On a heavy cookie sheet lined with parchment paper, toss all the ingredients except the burrata
Roast in a 275 degree oven for approximately 1 to 1 ½ hours or until the tomatoes blister
Remove from the oven, cool, and top with the fresh burrata
Serve with bread
