Filled with fresh strawberries, strawberry jam, and honey. Smothered in maple butter and extra jam. Little bite sized goodies that are perfect for vday cellies !!
It’s valentines weekend at our house and we always do it up big. We always have a massive family dinner, exchange gifts, and make fun foods and cocktails that are valentines themed. It’s been a tradition since I can remember. And since valenitne’s day is a Monday this year, we are celebrating tonight.
But no valentines celebration is complete without dessert. These muffins are just as good for dessert as they are for breakfast. They are the perfect amount of sweet from the strawberries and honey. Filled with strawberry jam and topped with honey butter. They’re super cute and also super easy to make.
We are enjoying these bite sized goodies for our dessert tonight. And for the dinner we have quite a spread. Fried calamari and bang bang salmon for appetizers. Dirty martinis and Dom for the drinks. But make it rose Dom for valentines day. Then for dinner we have lamb chops, lobster tails, Ruth Chris inspired chopped salad, and the cutest heart shaped pasta I have ever seen. Honestly my favorite was the salad…I ate WAY too much of it.
Anyway the night was super fun and it’s always one of my favorites. It’s a little pick me up fancy dinner and gift exchange in the middle of the winter. Cheers to valentines weekend guys !!
Ingredients
1/2 cup butter; melted
1/2 cup honey
2 teaspoons vanilla extract
1 cup whole milk
1/2 cup plain greek yogurt
2 eggs
1 1/2 cups flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 cup fresh strawberries; diced
1/2 cup strawberry jam
zest of 1 lemon
For the Honey Butter
1/4 cup butter; room temperature
2 tablespoons maple syrup
Directions
Preheat the oven 350 degrees. Grease a 12-slot muffin tin.
In a large bowl, whisk the butter, honey, vanilla, milk, yogurt, and eggs until combined. Add the flour, whole wheat flour, baking powder, and baking soda. Mix until combined.
In a small bowl, add the strawberries, strawberry jam, and lemon zest. Mix until combined. Carefully fold the the strawberries into the batter.
Divide the batter evenly among the muffin slots filling each about half way. Bake for about 28 - 30 minutes or until muffins are set.
Make the honey butter. In a small bowl, combine the butter and maple syrup. Serve muffins topped with maple butter.
