Potato, Rosemary, Broccoli Rabe Pizza. January is cold and boring but pizza friday definitely makes things more exciting. And this one is so so good. Potatoes and bread in one bite?! Does it get much better?? Layered with mozzarella, crispy rosemary potatoes, spicy sautéed broccoli rabe, and pecorino Romano. It’s SO good !! Happy weekend guys !!
This weekend is cold….seriously just so cold. And the only way I know how to make the cold a little more bearable is cooking comfy and cozy foods. And since it’s Friday were doing a classic winter pizza Friday. And this pizza is comfy, cozy, AND delicious.
It’s a crispy crust broccoli rabe and potato pizza. It’s a little herby, a little spicy, and totally delicious. And broccoli rabe is totally unique for a pizza topping, so we highly recommend giving it a try. Because is there anything better than broccoli rabe and bread….pretty much no.
And what makes this pizza even better is the crispy, herby potatoes. Thinly sliced and layered on the crispy pizza crust. Topped with all that broccoli rabe and pecorino Romano. All that cheesy goodness that you need on a pizza.
So cheers to the weekend and cheers to another pizza Friday. Because you need pizza Fridays to stay upbeat in the cold winter months…soon it will be back to grilling pizza in the warm weather…. not yet but soon !!
Ingredients
1 pizza dough; homemade or store-bought
1 head broccoli rabe; trimmed and cleaned
1/4 cup + 2 tablespoons olive oil
1 garlic clove; minced
salt and pepper
red pepper flakes
1 Yukon gold potato; thinly sliced
2 sprigs rosemary
4 ounces shredded mozzarella
2 tablespoons pecorino romano
Directions:
In a large pot, add 1/4 cup of olive oil. When hot, add the garlic, salt, and red pepper flakes. When the garlic sizzles, add the broccoli rabe. Cover and cook for about 8 - 10 minutes, stirring frequently.
In a medium bowl, combine the potatoes, remaining 2 tablespoons of olive oil, salt, pepper, and rosemary. On a baking sheet lined with parchment paper, add the potato mixture. Transfer to a 400 degree oven and cook for about 10 - 12 minutes or until crispy.
Spread the dough out on an oiled grill pan using your fingertips. Using a fork, pierce holes throughout. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Spread the mozzarella, potatoes, rosemary, and broccoli rabe evenly over top. Sprinkle with pecorino Romano. Place back on the grill for another 3 - 5 minutes until the other side of the crust is crispy.
