Pear & Honey Toasted Walnut Pizza

Pear & Honey Toasted Walnut Pizza. After all the decadent Christmas eats sometimes you just need some simple pizza, you know? This one is sweet and savory starting with a layer of caramelized onions. It’s extra cheesy with mozzarella, brie, and blue cheese. Topped with fresh pears and honey toasted wlanuts. It’s so so good you guys and perfect for the day after Christmas sadness !!

We all know the day after Christmas is never fun. It’s all the hype of the holidays coming crashing down. Although, I guess there’s still New Years?! But for some reason New Years just never excited me as much.

Today is definitely a little depressing. I am a little shocked that Christmas is over. The decorations are already coming down. And I am also pretty full from all the holiday eats. But the cooking can’t stop…so something simple yet delicious for post Christmas.

Pizza is always a fun way to lighten the post Christmas mood. And it’s Sunday so it’s game day. And pizza and game day is a match made in heaven. Plus I am going to xfinity today to watch the eagles game, so I guess you could say that is also helping me forget about the post Christmas sad vibes.

But anyway, this pizza is super delicious and super cheesy. And you can never go wrong with a super cheesy pizza. This crispy crust starts out with a layer of caramelized onions. Then it’s topped with mozzarella, brie, and blue cheese. Finished with fresh pears and honey toasted walnuts. It is heaven in every bite.

Happy Sunday guys…at least it’s not scary because I am still on vacation. So cheers to that !!

Ingredients

  • 1 pizza dough; homemade or store-bought

  • 1 sweet onion (thinly sliced)

  • 2 tablespoons butter

  • 1/4 cup sherry

  • salt and pepper

  • 1/3 cup walnuts

  • 1 tablespoon honey

  • 1/4 pound brie

  • 2 tablespoons crumbled stilton

  • 4 ounces shredded mozzarella

  • 1/2 pear; thinly sliced

  • thyme for garnish

Directions:

  1. In a large skillet, melt the butter. Add the onions. Season with salt and pepper. Sauté until onions are browned and caramelized. As the onions begin to dry up add the sherry and water as needed.

  2. On a baking sheet lined with parchment paper, add the walnuts. Drizzle with honey. Transfer to a 400 degree oven and cook for about 8 - 10 minutes or until toasted.

  3. Spread the dough out on an oiled grill pan using your fingertips. Using a fork, pierce holes throughout. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Spread the onions, mozzarella, brie, and blue cheese evenly over top. Top with pears and honey walnuts. Place back on the grill for another 3 - 5 minutes until the other side of the crust is crispy.

  4. Serve topped with fresh thyme.
