Pasta with Bacon, Black Eyed Peas, & Spinach

Pasta with Bacon, Black Eyed Peas, & Spinach. Ringing in the new year with another good luck dish. This pasta salad is loaded with thick-cut, crispy bacon, black eyed peas for good luck, cherry tomatoes, and fresh spinach. It’s super delicious and addicting and it’s one of my favorites that we pretty much only have once a year !!

Like I said…we need all the luck that we can get in the new year. So another night, another good luck dish. And honestly this pasta is one of my favorites and we pretty much only make it once a year for New Years. So needless to say, I am super excited to be having this dish tonight.

This pasta is super simple. It’s actually a pasta salad, but you can eat it hot if you prefer. It’s got all my favorites…bacon, black eyed peas, spinach, tomatoes. Like I said it’s simple, but it’s SO good and I am so here for it.

And the best part is…good luck which I seem to desperately need. Especially to make it through this week. I am just truly struggling at work this week, so thank god it is at least halfway over. But anyway we hope you’re all having a good start to the new year !! A fresh start with lots of good plans !! Because we know we have some exciting things coming up this year !! Cheers !!


Ingredients

  • 1/2 pound bacon; thinly sliced

  • 1/3 cup olive oil

  • 1 garlic clove; thinly sliced

  • 1/2 teaspoon red pepper flakes

  • 1 pound cherry tomatoes; halved

  • 2 cups frozen black eyed peas; drained & thawed

  • 2 tablespoons balsamic vinegar

  • salt and pepper

  • 1 1/2 pounds orecchiette pasta

  • 5 ounces baby spinach leaves

Directions

  1. In a medium skillet, cook the bacon. Stir until browned and crisp. Using a slotted spoon, transfer the bacon to paper towels to drain. Add the garlic and red pepper, cook for 2 minutes or until fragrant. Scrap the garlic oil into a serving bowl. Add the tomatoes, black eyed peas, balsamic vinegar, salt, and pepper. Toss well.

  2. Meanwhile cook the pasta. Drain well. Add the pasta, spinach, and bacon to the tomato mixture. Stir until spinach is wilted. Season with salt and pepper to serve.
