Creamy Pasta and Peas

Creamy Pasta and Peas, aka the lazy princess. Creamy pasta made with peas and Parmesan for an end of the year pasta dish. It’s super simple but super delicious. Thank you to the Pasta Queen for the inspiration on this perfectly delicious pasta !! Happy New Year’s Eve Eve guys !!

Nothing like ending the year with pasta and starting the new year with pasta. Because you know we are ALL about the pasta. So to celebrate another year…we’re having this delicious and creamy pasta and peas recipe. It’s super simple, but it’s really really good.

We are only one day away from New Years Eve and you know we have been planning our menu for weeks now. It’s all about the fancy seafood dishes that pair perfectly with champagne. Decadent and fancy…that’s the way it goes on New Years Eve !!

Ingredients

  • 1/4 cup olive oil

  • 1/2 sweet onion; chopped

  • 1 1/2 pounds fresh peas

  • salt and pepper

  • 3 - 4 cups vegetable broth or water or combination

  • 1 pound pasta

  • 1 egg

  • 1/3 cup grated parmigiano reggiano

Directions

  1. In a medium pot, heat the olive oil. Add the onion and sauté 3 - 5 minutes until softened. Add the peas and season with salt and pepper. Add about 2 cups of broth or water. Cook until peas are softened. Add more broth/water as needed.

  2. When peas are cooked transfer about 3 cups to a blender and purée. Add the mixture back to the pot with the whole peas and stir to combine. Season with salt and pepper.

  3. Cook the pasta for half of the cooking time. Using a slotted spoon transfer the pasta to the pot with the peas. Finish cooking it with the sauce adding pasta water as needed. When it’s finished cooking, scramble the egg and cheese together and add it to the pasta. Serve topped with additional cheese and black pepper.
