Blackened Salmon with Creamy Avocado Sauce, Sweet Potatoes, & Riced Cauliflower. Healthy January anyone?! Using our Secret Island Salmon !! This salmon has alllll the veggies goodness with a little basil for garnishing and a simple but delicious blackened seasoning. Little creamy sauce, little spicy seasoning, LOTS of fresh veggies. You guys need this whether you’re trying to be healthy in the new year or not…because either way it’s delicious !!
To be honest with you guys, I am not really one for healthy January. I mean January is depressing enough, ya know? But luckily for me, I am huge veggie lover…so I can kind of pull off the whole “I’m doing it healthy thing!”
Nothing against anyone who loves to do a good healthy January, but personally I want foods that I love to lighten my mood when its cold and dark and dreary outside. And this dish is right up my alley and just so happens to be a healthy dish too…best of both world…am I right?!
The salmon is seasoned with blackened seasoning so it’s a little spicy…which I love. Then you’ve got alllll the veggies. I love avocado, I love sweet potato, and I love cauliflower. So needless to say this whole plate is just heaven to me !!
And best part about today? Thursdays are Fridays at my company and it has for sure been a week. So, I am celebrating the weekend. Celebrating with this delicious salmon and a cocktail of course…a blood orange martini to be exact. We found freshly squeezed blood orange juice at the store this week, so you know we had to give it a try.

Ingredients
For the Salmon
2 small sweet potatoes; sliced into 1/2 inch rounds
1/4 cup olive oil divided
salt and pepper
3 - 4 (6 ounce) Secret Island salmon filets
2 tablespoons blackened seasoning
12 ounces riced cauliflower
4 tablespoons butter
1 avocado; sliced
fresh basil leaves for serving
For the Avocado Sauce
1 avocado; mashed
juice of 1 lemon
1/4 cup sour cream
1 tablespoon olive oil
salt and pepper
Directions
Rub the sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Place the potatoes on a baking sheet lined with parchment paper. Transfer to a 425 degree oven and roast for about 20 - 25 minutes.
Sprinkle the salmon with the blackened seasoning and drizzle with the remaining 2 tablespoons of olive oil. Add the salmon to the baking sheet with the potatoes and cook for another 10 minutes or until salmon is cooked through.
Make the cauliflower. In a large skillet, melt the butter over medium-high heat. Add the riced cauliflower and sprinkle with salt and pepper. Sauté for about 5 minutes until cooked and fragrant.
Make the avocado sauce. In the bowl of a food processor, combine the avocado, sour cream, lemon juice, olive oil, salt, and pepper. Process until smooth.
Serve salmon over riced cauliflower and avocado sauce. Top with roasted sweet potatoes, sliced avocado, and fresh basil leaves.
