Tomato Basil Brie Pasta. Alllll the summer tomatoes in a creamy basil and Brie sauce. It’s one of those staple summer pastas in our house and it’s just so so good. It’s creamy, it’s cheesy, it’s herby. It’s all things summer and perfect for a mid week pick me up !!
I am back at the beach and enjoying one of my all time favorite pasta dishes !! Growing up I always shared a birthday with my MomMom, so we had a shared birthday dinner and I LOVED it. Because every year, my birthday dinner request was Carbonara and my MomMom’s was Tomato Basil Brie Pasta. So we pretty much got the best of both worlds with the combined dinner.
When my MomMom passed and I was older, I continued on her tradition. I left my Carbonara request behind and started requesting this pasta for my birthday dinner instead. As I got older I appreciated this pasta much more. Especially since my love for tomatoes and all veggies of course grew tremendously in that time. But I also wanted to have this pasta for birthday dinners in honor of my MomMom who was one of the best cooks I have never known. My mom learned from my MomMom and now I have learned from my mom. And I am so grateful to have had such amazing teachers to learn from.
Even though my birthday passed back in May, we did indeed have this pasta for the celebration. And it has become one of our staple pastas to make in the summer. Bonus?! It’s super easy. And it’s fresh which is perfect for summertime. All those tomatoes, basil, and brie…summer in a bowl if you ask me.
Anyway I am super happy to be back at the beach. And tomorrow is my “fo-Friday” at work so I am super excited for the weekend start. Stay tuned for all this weekends fun eats, cocktails, and adventures !! Cheers !!
Ingredients
4 roma tomatoes; chopped
10 ounces cherry tomatoes; halved
1 cup fresh basil; sliced
½ pound brie; cut into chunks and rind removed
1 cup olive oil
salt and pepper to taste
1 pound long cut pasta
Directions:
In a large bowl, add the tomatoes, basil, brie, olive oil, salt, and pepper. Let the mixture marinate for about 1 hour.
Cook the pasta. Drain, saving 1 cup of pasta water. Add the pasta to the brie mixture. Toss to combine, adding pasta water as needed. Serve topped with additional fresh basil leaves.
