Tomato Basil Breadcrumb Pasta with Burrata. Nothing beats a simple summer tomato basil pasta. But do it up a little bit with herby, lemony breadcrumbs and fresh Burrata. The tomatoes are bursting with color and flavor and surrounded by loads of fresh basil leaves. The kind of summer sunday pasta that everyone needs on a warm night !!
Another May weekend has come and gone. WAY too quick for my liking especially since there is only one weekend left of May. But the good news is, it’s Memorial Day Weekend…AND my birthday all in one !! I am super excited for the festivities that are planned. Especially all the food festivities since I get to pick out the menu.
Anyway, back to this weekend which was also super fun and beautiful. I couldn’t have asked for a more perfect weekend between the weather, the dishes we made, and the fun night out I had last night. I went to a Spanish Tapas restaurant with some friends for an early birthday celebration, and we had the best time. I’m not even kidding when I say we were at the restaurant for almost 4 hours.
But tonight it’s back to reality with the new work week starting. But next weekend is a long weekend so that is something to look forward to. No Sunday scaries this time next week. But today there are definitely some scaries and you know that means pasta. Because there is no better way to cure the scaries than with pasta. And a summery tomato basil is the key on a warm night. With some wine too of course.

Ingredients
3/4 cup fresh breadcrumbs
3 tablespoons + 1/4 cup olive oil; divided
salt and pepper
red pepper flakes
zest of 1 lemon
12 ounces cherry tomatoes
1 garlic clove; minced
2 tablespoons fresh thyme leaves
1/2 cup white wine
1 cup chicken broth
1/2 cup fresh basil
8 ounces burrata
Directions
In a large skillet, heat 3 tablespoons of olive oil. Add the breadcrumbs. Season with salt, pepper, and red pepper flakes. Remove from heat, add the lemon zest, and set aside.
Clean out the skillet and add 1/4 cup olive oil, garlic, tomatoes, basil, and thyme. Stir until the tomatoes start to burst. Add the wine and increase the heat. Add the chicken broth while the sauce is bubbling.
Cook the pasta. Drain, saving 1 cup of pasta water. Add the pasta to the skillet and toss to combine. Add pasta water as needed. Top with additional basil leaves, breadcrumbs, and burrata.
