S’mores Brownie Skillet. Labor Day weekend is all about barbecuing, but what’s a barbecue without the dessert?! Especially when it is THIS decadent and delicious. Think your average s’mores, but stuffed into one giant gooey brownie skillet. Oh my god, you guys, this is so addicting. And the key is serving it warm out of the oven, extra gooey with some ice cream on top !! Seriously, the perfect dessert for your Labor Day barbecue !! Cheers !!

Can you really do a holiday weekend without dessert?! The answer is definitely no. And when you’re spending the weekend barbecuing, there really isn’t anything better than ooey, gooey s’mores…am I right?! But take them to the next level and do a super decadent and delicious brownie skillet. S’mores in brownie form. It really doesn’t get much better.

Today, is a bit windy and definitely not a beach day. BUT it’s Sunday funday and a holiday weekend. You know Sunday funday is always going to be good when everyone has off work on Monday. So, today started off with brunch and mimosas. We have not done a brunch in SO long. But my aunt was staying with us this weekend, so we had to make it extra fun and festive. So, Sunday brunch it was.

Later my good friend came over and we went to the bars for Sunday funday. But since we went early, you better believe this dessert was waiting for us when we got home !! The bars were SO fun, but it was just a little sad knowing it was practically the last night out of the summer. We were talking about how weird it is that labor day weekend everyone you know is out down the shore…then literally the weekend right after, the shore town bars are a ghost town and it’s back to the city. Sad, but true every single year.

So dessert when we got home was definitely necessary. This brownie skillet is best served warm and left a little gooey. Topped with a big scoop of vanilla ice cream. I mean, guys, you gotta try this one. It takes a simple dessert to a whole new level of decadent.

Ingredients

  • 1 1/2 sticks butter

  • 1 cup chocolate chips

  • 3/4 cup sugar

  • 2 teaspoons vanilla extract

  • 2 teaspoons instant coffee granules

  • 3 eggs

  • 1/3 cup flour

  • 1/3 cup cocoa powder

  • 3/4 teaspoon baking powder

  • 5 squares graham crackers; broken into pieces

  • 2 Hershey chocolate bars; broken into pieces

  • 1 cup marshmallow fluff

Directions

  1. Pre-heat the oven to 350 degrees. Grease an oven-safe cast iron skillet.

  2. In the microwave, melt the butter and the chocolate chips in a large bowl. Stir in the sugar, vanilla, instant coffee, eggs, flour, cocoa powder, and baking powder.

  3. On the bottom of the prepared skillet, arrange half the graham crackers and half the Hershey’s chocolate. Pour half the brownie batter over the graham crackers and chocolate. Dollop the marshmallow fluff over the brownie batter. Add the remaining graham crackers and Hershey’s chocolate. Pour the remaining brownie batter over the top. Bake for 28 - 30 minutes or until brownies are set but still gooey. Transfer to the broiler for 1 minute or use a blow torch to toast the marshmallow fluff. Serve topped with ice cream.
