Salmon Poke

Salmon Poke. When the salmon is this fresh and delicious…there is only one way to serve it. In a poke bowl marinated in soy sauce, toasted sesame, and some citrus. With mango, avocado, jalapeños, and scallions. Served alongside spicy mayo for alllll the dunking and dipping. So good and so perfect for summer Saturday’s !!

Another staple of summer Saturdays and one of my favorites. I am addicted to poke in the summer whether we make it with salmon or ahi tuna I am always all for it. And like I have mentioned in the past the seafood at our local farmers market is so good and so fresh it’s almost a shame to cook it. Which is why many weekends we make poke with it.

Today we are pairing this poke with my classic mango and avocado salsa. It goes so well with the fresh fish and is the perfect combination of sweet and spicy. And not to mention how pretty the poke always looks. I mean its a super eye catching dish that is so fun and so summery.

And of course we are serving up this poke with clams and spaghetti. It’s the classic farmers market combo of summer beach Saturdays. The only downside to this day is it’s a bit overcast, but that just means we will be doing lots of cooking. And you guys know I love cooking in the kitchen at the beach house, so even though the weather is iffy it is still a good summer Saturday !! Cheers !!


Ingredients

  • 1 pound sushi grade salmon; diced

  • 1/2 cup soy sauce

  • 1 orange juiced

  • 1 lemon juiced

  • 1 tablespoon mirin

  • 2 teaspoons sesame oil

  • sesame seeds

  • scallions for topping

For the Mango Avocado Salsa

  • 2 mangos; diced

  • 2 avocados; diced

  • 2 jalapeños; seeded and diced

  • juice of 1 lime

  • 2 tablespoons orange juice

  • salt and pepper

For the Sriracha Mayo

  • 1/3 cup mayonnaise

  • 2 tablespoons sriracha sauce

  • 1 lemon; juiced

  • 2 teaspoons sesame oil

Directions

  1. Mix the salmon, soy sauce, orange juice, lemon juice, mirin, sesame oil, and sesame seeds in a medium bowl. Refrigerate for 1 hour.

  2. To make the salsa. In a medium bowl, add the mango, avocado, jalapeño, lime juice, and orange juice. Season with salt and pepper. Toss to combine.

  3. To make the Sriracha Mayo. Combine all ingredients in a small bowl.

  4. Assemble the poke. Spoon the salmon mixture over the mango salsa. Serve topped with scallions and alongside Sriracha Mayo.
