Lobster Bacon Avocado Tacos

Lobster Bacon Avocado Tacos. A shellfish taco for taco Tuesday but without the Mexican flare. Think buttery lobster BLT minus the tomato and with avocado instead. And drizzled with Old Bay Crema. Don’t forget the beer too…it is taco tuez after all. You guys need to try these, they are super fun for a summer seafood dinner !!

Taco Tuesday…but we’re doing it a little different tonight. Because there is absolutely nothing Mexican about this taco, but it is so SO good. It’s like a cross between a buttery lobster roll and a BLT without the tomato but with some avocado instead. This cross between two super popular and super delicious sandwiches in the form of a taco is pretty much the most fun summer seafood recipe we have had.

OH and don’t even get me started on the Old Bay Crema. Yes, you all know I am a sauce on sauce on sauce girl. Like anything dry? How could I ever. The sauce is always what makes the recipe and this old bay Crema is perfect with so many seafood recipes. It’s kind of like a mustard sauce, kind of like a Crema, kind of really freaking delicious.

These are so fun for summer, and since it is the last week of August…actually scratch that…it's the last day of August…we really needed to bring out the summer recipes.

I am in total shock that tomorrow is September. Like how? I swear it was just May 1st. And I would totally go back to May in a heartbeat and do the whole summer over again. This summer girl just can’t ever let go. But the summer recipes will definitely be sticking around for a while. I'm talking like through the month of September.

But in the meantime I am going to enjoy this last night of August and the holiday weekend that is on it’s way !! We have lots of fun activities and recipes planned !! Cheers !!


Ingredients

For the Old Bay Crema

  • 1/4 cup sour cream

  • 1/4 cup mayonnaise

  • 1 teaspoon old bay

For the Tacos

  • 1/4 cup clarified butter; melted

  • 2 (1 1/2 pound) lobsters; steamed and meat removed

  • 1/2 pound thick-cut bacon; cooked and crumbled

  • 4 - 6 corn tortillas; charred

  • shredded green cabbage

  • 1 avocado; sliced

Directions

  1. Make the Old Bay Crema. In a small bowl, add the sour cream, mayonnaise, and old bay seasoning. Stir to combine.

  2. Cut the lobster meat into chunks. Im a medium bowl, add the bacon, lobster, and melted butter. Toss to combine.

  3. Assemble the tacos. Layer the tortillas with green cabbage. Top with the buttery lobster and bacon mixture. Add the avocado and drizzle with the Old Bay Crema.
