Herby Tomato & Gouda Grilled Pizza

Herby Tomato & Gouda Grilled Pizza. Cheesy, herby, summery tomato goodness all on a crispy grilled pizza crust to get the weekend started early. We used Arla Gouda cheese to perfect this super cheesy summer pizza ! Pair with a summer cocktail and you are so weekend ready !! Happy Thursday pizza night guys !!

Nothing beats a casual pizza night at the beach to kick off the weekend. A little grilling, a little cocktails, a little crispy, cheesy pizza. And this one is super delicious. We went for a gouda cheese to start. It’s rich and super flavorful and pairs amazingly with the herby tomatoes on top. So onto the next layer of this pizza…the herby cherry tomatoes. It is the peak of tomato season so we decided to top this pizza with tricolor cherry tomatoes marinated in a simple but delicious herby olive oil. There’s basil, thyme, and oregano. Then a dash of salt and pepper of course. And there you have your simple, delicious topping.

Thursday’s are usually the day we come back to the beach. It is usually after a day of work, so by the time we get down it can be pretty late sometimes. That’s what makes a pizza Thursday so perfect for us. Because it’s easy, it’s simple, and it’s delicious. Pizza night with a good cocktail. Nothing is beats it.

Thursday’s are also my favorite day of the week as you all know. Especially in the summer. I am super happy to be at the beach and enjoying a tropical rum and orange juice to pair with this fun, summery grilled pizza. Stay tuned for all the exciting weekend recipes we have coming your way !! But now it is back to drinks, pizza, and the gorgeous moon that is out tonight…full moon on Sunday, so expect to see some moon pictures this weekend !!


Ingredients

  • 14 ounces pizza dough (store-bought or see homemade recipe below)

  • 8 - 10 slices Arla Gouda cheese

  • 10 ounces tricolored cherry tomatoes; halved

  • 4 tablespoons olive oil; divided

  • 2 tablespoons basil

  • 1 tablespoon thyme

  • 1 tablespoon oregano

  • salt and pepper

For the Pizza Dough 

  • 2 cups flour 

  • 1 teaspoon kosher salt 

  • 1/2 teaspoon instant yeast

  • 1 cup warm water

Directions

  1. Make the pizza dough. In a large bowl whisk the flour, salt, and yeast. Add water and mix with a spatula until a sticky ball forms. Drizzle with olive oil, cover with a damp towel, and let the dough rise for an hour. It should double in size. Cut the dough in half. This recipe will yield 2 pizza doughs (you will only need 1 half for this recipe).

  2. Drizzle 2 tablespoons of the olive oil over the pizza dough. Spread the oiled dough out on a grill pan using your fingertips. Using a fork, pierce holes throughout.

  3. In a medium bowl, add the remaining 2 tablespoons of olive oil, tomatoes, basil, thyme, and oregano. Season with salt and pepper. Toss to combine.

  4. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Layer with the sliced gouda. Place back on the grill for another 3 - 5 minutes until cheese has melted. Remove from grill and spread the tomatoes and herbs over the cheese. Serve topped with additional basil leaves.
