Havarti Mushroom Pizza with Truffle

Havarti Mushroom Pizza with Truffle. It’s the holiday weekend coming up, so we’re thinking grilling and barbecue, but especially thinking grilled pizza. Today we’re partnering with Finlandia, and layering our pizza with their sliced Havarti cheese. Topping it with truffle, buttery caramelized mushrooms, and fresh arugula and basil. Memorial Day weekend is one of my all time favorite weekends of the year. It’s basically the kick-start weekend to summer and there is always so much cooking, drinking, and eating. For this year’s MDW, we will be at the beach and we’re imagining pizza night to get the weekend started. Maybe some summery cocktails on the deck? A lot of grilled pizzas? Fun, beachy music?

We’re always looking to try new cheeses on our pizzas to change things up. Pizza night occurs often in our house so we’re always trying to stay creative. The possibilities with pizza cheeses and toppings are pretty much endless. Although, we have never done a pizza recipe using havarti cheese before. Enter, the Havarti Mushroom Pizza with Truffle. Buttery caramelized mushrooms, decadent truffle pate and oil, fresh arugula and basil. A summery and colorful pizza for grilling over Memorial Day weekend.

Ingredients

  • 14 ounces mixed sliced mushrooms 

  • 1/4 cup butter

  • salt and pepper 

  • 14 ounces pizza dough (store-bought or see homemade recipe below)

  • 2 tablespoons olive oil 

  • 7 ounce package Finlandia sliced cheese

  • 2 tablespoons truffle pate

  • 2 tablespoons truffle oil

  • 1 cup arugula 

  • 1/4 cup fresh basil leaves

  • olive oil for drizzling

For the Pizza Dough 

  • 2 cups flour 

  • 1 teaspoon kosher salt 

  • 1/2 teaspoon instant yeast

  • 1 cup warm water

Directions

  1. In a large skillet melt the butter over medium heat. Add the mushrooms and cook undisturbed for 5 minutes until caramelized. Sprinkle with salt and pepper and give them a stir. Continue cooking until all water has evaporated and mushrooms are nicely browned. Set aside.

  2. Make the pizza dough. In a large bowl whisk the flour, salt and yeast. Add water and mix with a spatula till a sticky ball forms. Drizzle with olive oil, cover with a damp towel, and let the dough rise for an hour. It should double in size. Cut the dough in half. This recipe will yield 2 pizza doughs (you will only need 1 half for this recipe).

  3. Drizzle the olive oil over the pizza dough. Spread the oiled dough out on a grill pan using your fingertips. Using a fork, pierce holes throughout.

  4. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Layer with the sliced Havarti. Spread the mushroom pate over the cheese. Top with the cooked mushrooms, drizzle with truffle oil, salt, and pepper. Place back on the grill for another 3 - 5 minutes until cheese has melted. Top with arugula and basil. Drizzle with olive oil or truffle oil.
