Grilled Shrimp Burgers with Mango Avocado Salsa. Mango salsa again? YES. You know we live for mango salsa and seafood recipes…don’t knock it until you try it !! These crispy grilled shrimp burgers are filled with chunky shrimp, chives, parsley, and old bay seasoning. They’re super perfect for summer and then there’s that little kick of sweetness with the salsa. And finally the key to a good burger is the sauce. We made a Creamy Avocado Sauce for alllll that dipping and dunking. Another night of summer seafood and we are totally here for it…cheers !!
Summer is definitely coming to an end and quick !! As you guys know, I am super sad about it and you also know how much I love…mango salsa. And summer and mango salsa just kind of fit together. So, I need to make as much mango salsa as I can before the summer ends. Although if I am being honest, I can’t see myself giving up one of my all time favorite recipes even when it’s fall. So if you’re sick of seeing it, I am not sorry because you might be seeing it for quite a while longer.
But anyway, the mango salsa is not the main focus of this recipe. It’s those chunky, herby shrimp burgers. This is our all time favorite recipe for shrimp burgers. We have been making this one for years, and we seriously haven’t had it in SO long. So I am super excited to be having these tonight. And although the salsa is not the main attraction here, I have never tried these shrimp burgers with it yet. So I am even more excited about these burgers with my favorite salsa.
And finally that dipping sauce. It’s all about the sauce when it comes to burgers. In the summer you need a light, cool, and refreshing sauce to smother your burgers in. I don’t care what kind of burger it is…I am strictly here for the sauce ;))
Late August and just August in general definitely feels like the Sunday of summer. BUT did I mention how excited I am for this weekend?! I once again have some super fun plans and some super fun dinners planned. Seriously I’m thinking this weekends food content is going to be about as good as it gets in the summer. Ingredients
1 pound shrimp; peeled and deveined
1 egg
2 tablespoons mayonnaise
2 tablespoons chopped parsley
2 tablespoons chives
juice of 1 lemon
1/4 teaspoon old bay
cayenne pepper
1/3 cup panko bread crumbs
salt and pepper
fresh basil leaves for serving
For the Mango Avocado Salsa
2 mangos; diced
2 avocados; diced
2 jalapeños; seeded and diced
juice of 1 lime
2 tablespoons orange juice
salt and pepper
For the Creamy Avocado Sauce
1 avocado; mashed
1/4 cup sour cream
juice of 1 lemon
salt and pepper
Directions
In the bowl of a food processor, add the shrimp and pulse 7 or 8 times until chopped. Transfer to a medium bowl. Add the egg, mayonnaise, parsley, chives, lemon juice, old bay, cayenne, and panko. Season with salt and pepper. Stir to combine. Form into 4 patties.
Heat the grill on medium heat. Add the shrimp burgers and cook for 3 - 4 minutes per side or until golden. Remove from grill and set aside.
To make the salsa. In a medium bowl, add the mango, avocado, jalapeño, lime juice, and orange juice. Season with salt and pepper. Toss to combine.
To make the Creamy Avocado Sauce. In a small bowl, add the avocado, sour cream, and lemon juice. Season with salt and pepper. Stir to combine.
Serve shrimp burgers topped with salsa and alongside creamy avocado sauce. Garnish with fresh basil leaves.
