Grilled Corn & Zucchini Pizza

Grilled Corn & Zucchini Pizza. Summer pizza friday in full swing with a grilled veggie pizza. Grilled sweet corn and summer zucchini squash topped with fresh basil and red pepper flakes. And paired with a good cocktail of course !! Cheers !!

So it’s pizza Friday and a super exciting one because we have so many exciting things planned this weekend AND it is beautiful. There is nothing more perfect than a beautiful weekend with fun foods, fun drinks, and lots of fun plans.

Tonight I am having a friend over and we are doing a simple pizza and cocktails on the deck night before we go out to the bars. So obviously since it’s so beautiful out we had to do a grilled pizza. But even better….a grilled pizza with grilled summer veggies. And sweet corn and zucchini are two of my favorite summer grilling veggies. So we decided to add them to the top of a cheesy mozzarella pizza. Finish it off with fresh basil and lots of red pepper flakes. Because you could always use a little spice ;)) !!

Tonight we are keeping it simple because tomorrow we are having my uncle and aunt over for a beach day and dinner. They are staying with us for the weekend and we are super excited. We have plans to go to the farmers market and pick up all our favorites in the morning. We always get tons of the freshest seafood I have ever tasted and we’re going to make poke and clams and spaghetti as the main dishes. Then we’re going to prep the dinner and head to the beach !! So stay tuned for our exciting day tomorrow !

Ingredients

  • 1 pizza dough; homemade or store-bought

  • 2 ears corn

  • 1 zucchini; sliced

  • 3 tablespoons olive oil

  • salt and pepper

  • 7 ounces mozzarella cheese

  • fresh basil and red pepper flakes for topping

Directions

  1. Drizzle the corn and zucchini with olive oil. Season with salt and pepper. Heat the grill to medium heat. Place the corn and zucchini on the grill and cook for 6 - 8 minutes or until charred, flipping once. Remove the corn kernels from the cob and set aside.

  2. Spread the dough out on an oiled grill pan using your fingertips. Using a fork, pierce holes throughout. Place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Spread the mozzarella evenly over the dough. Top with corn kernels and zucchini. Place back on the grill for another 3 - 5 minutes until the other side of the crust is crispy.

  3. Serve topped with fresh basil leaves and red pepper flakes.
