Chipotle Salmon Tacos with Pineapple Avocado Salsa

Chipotle Salmon Tacos with Pineapple Avocado Salsa. A little sweet and spicy taco tonight. The salmon is coated in Chipotle chili and lots of other spicy seasonings. The salsa is loaded with sweet pineapple, creamy avocado, roasted jalapeños, lime juice, and orange juice. Served alongside a lime Crema. It’s all the things that bring together the perfect combination of sweet and spicy and I am loving it !! Pair with a tropical cocktail because these are tropical tacos, you know?!

Mid July tropical cocktails and tacos to get the weekend started off right?! I think yes !! So right now I a super into tropical salsas to pair with my seafood. I usually do a mango or a pineapple salsa. But I am totally open to more tropical, sweet and spicy suggestions if you guys have any because I know I have been doing mango and pineapple a lot lately. But can you blame me?! It is just so so good !!

Tonight I was inspired to do a salmon taco with one of my sweet and spicy salsas. I opted for pineapple and added avocado, roasted jalapeño, lime juice, and orange juice. We did a salmon taco last summer that was totally delicious, but without the sweet aspect. And since you guys know I am all about the sweet and spicy this summer I obviously added the pineapple salsa to this taco.

The salmon is chipotle flavored with a little spice. The blend of spices was perfect to pair with the sweet salsa. A little sweet, a little spicy, a little tangy. You know I am ALL about that !!

Tonight I am back at the beach and we are expecting a tropical storm. So, why not pair a tropical storm with tropical cocktails and tropical tacos ?! It seems like the perfect idea to me !! Cheers guys !!


Ingredients

  • 2 - 3 (6 ounce) salmon filets

  • 2 tablespoons olive oil

  • 1 teaspoon chipotle chili powder

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon cumin

  • 1 cup purple cabbage

  • charred tortillas for serving

For the Pineapple Avocado Salsa

  • 1 cup pineapple; diced

  • 1 avocado; diced

  • 2 jalapeños

  • juice of 1 lime

  • 1 tablespoon orange juice

  • salt and pepper

For the Lime Crema

  • 1 cup sour cream

  • juice of 1 lime

  • salt and pepper

Directions

  1. In a baking dish, drizzle the salmon with the olive oil. Sprinkle with the chili powdered, paprika, and cumin. Cut the tops off the jalapeños. Add them to the baking dish. Roast in a 275 degree oven for 10 - 12 minutes or until salmon is cooked through. Remove the salmon from the baking dish and set aside. Continue to roast the peppers until nicely browned.

  2. Make the pineapple salsa. In a medium bowl, add the pineapple, avocado, roasted jalapeños, lime juice, and orange juice. Season with salt and pepper. Toss to combine.

  3. Make the Lime Crema. In a small bowl, mix the sour cream, lime juice, salt, and pepper.

  4. Assemble the tacos. Char the tortillas over a flame. Shred the salmon. Layer the tortillas with purple cabbage and salmon. Top with Pineapple Avocado Salsa and Lime Crema.
