Cauliflower Potato Salad

Cauliflower Potato Salad. 4th of July bbq always needs a potato salad…but skip the potatoes and use cauliflower instead. Creamy herby sauce to coat the cauliflower and packed with thick cut bacon and hard boiled eggs. Honestly it’s addicting and perfect for all the veggies lovers at your bbq !!

4th of July BBQ definitely means potato salad. But if you’re a veggie lover like me then make “potato” salad. And what I mean by that is make it a cauliflower “potato” salad. Even if you’re not a big veggie lover, I highly recommend giving this a try because honestly I can’t tell the difference. I think I actually like this version better.

There cauliflower is coated with a creamy, herby mayo and tossed with hard boiled eggs and thick-cut bacon. If you’re looking for something different to bring to a BBQ and impress all the guests…this is it !! And it’s actually pretty addicting. I know this was my favorite dish for our BBQ last night, so we had to share this recipe with you guys.

I don’t know about you guys but I am having a major case of the Monday scaries. Even though this week is only a two day work week for me with the holiday and I am taking off Thursday, I am feeling sad. I am sad that 4th of July weekend, one of my favorite weekends of the year, is over. And I am sad at how fast summer is FLYING. But I have so many exciting things coming up and there are so many summer recipes I want to try that I am also extremely excited for the rest of the summer. Hope you all had as great of a holiday weekend as I did !!


Ingredients

  • 1 large head cauliflower; chopped

  • 3 stalks celery; chopped

  • 6 hard boiled eggs; chopped

  • 6 strips bacon; cooked and crumbled

  • 1/3 cup fresh dill

  • 1/4 cup chopped fresh chives

  • 1/2 cup mayonnaise

  • 1/2 cup sour cream

  • 1 teaspoon dijon mustard

  • 1/2 teaspoon apple cider vinegar

  • salt and pepper

  • paprika for serving

Directions

  1. Add the cauliflower to a large pot of salted water. Bring the water to a boil and cook for 3 - 4 minutes. Drain the cauliflower and let it cool.

  2. In a large bowl, add the cauliflower, celery, hard boiled eggs, bacon, dill, and chives.

  3. In a small bowl, whisk the mayonnaise, sour cream, dijon mustard, and apple cider vinegar. Season generously with salt and pepper. Fold the dressing into the bowl with the cauliflower. Serve sprinkled with paprika.
