Caesar Salad Pasta Salad

Caesar Salad Pasta Salad. MDW is all about bbq and my favorite…pasta salads. This one is creamy and loaded with romaine, crispy bacon, croutons, and avocado. A little bit of a Caesar salad with a twist. Happy Memorial Day guys !!

My favorite part of just about any summer barbecue is the pasta salad. I don’t know why but I just love how creative you can get with them. And I love a good pasta salad filled with all the colors and flavors of summer. And this one is just another winner.

To celebrate Memorial Day we are doing it up with a Caesar salad pasta salad. So it’s tossed in our classic caesar dressing and croutons. But to make it even better we added avocado to make it even creamier and some crispy bacon…because who doesn’t love bacon?!

So it’s been quite a long weekend. And as much fun as it’s been I'm honestly kind of ready for it to end because I am exhausted. But to say the least, the weather was pretty much perfect. I had so much fun celebrating both MDW and my birthday at the beach. There were tons of great drinks and foods. So I rate this MDW pretty high in my book !! Hope you all had as great of a weekend as I did !!


Ingredients

For the Caesar Dressing

  • 2 tablespoons olive oil

  • 2 garlic cloves; minced

  • 3 - 4 anchovy filets; finely chopped

  • 1 teaspoon dijon mustard

  • 1 teaspoon Worcestershire

  • 1/2 teaspoon tabasco

  • 1 cup mayonnaise

  • juice of 1 lemon

  • 2 - 3 tablespoons parmesan cheese

For the Pasta Salad

  • 2 tablespoons olive oil

  • salt and pepper

  • 4 - 6 slices thick-cut crusty bread

  • 1 pound pasta

  • 1 avocado; diced

  • 1/2 pound bacon; cooked and chopped

Directions

  1. Make the salad dressing. In a medium bowl, whisk the olive oil, garlic, anchovies, dijon mustard, Worcestershire, and tabasco. Stir in the mayonnaise, lemon juice, and parmesan cheese.

  2. Drizzle the bread with the remaining 2 tablespoons of olive oil. Sprinkle with salt and pepper. Grill the bread over medium-high heat on each side until charred. Remove from grill and tear into chunks.

  3. Cook the pasta and drain.. Add the pasta back to the pot. Toss with the caesar dressing. Fold in the croutons, avocado, and bacon. Taste and adjust seasonings with salt and pepper.
