Blueberry Crumble Pie Bars

Blueberry Crumble Pie Bars. A little something sweet to kick off the first weekend of June. Think, blueberry pie in the form of a delicious bite sized bar. A little sweet, a little tangy, a little fruity. So good and so easy !!

When it is a little stormy at the beach on a Friday and you’re not sure what to do? You bake. Something summery though of course. And if there is one thing to bake that makes me think summer, well it’s blueberry pie. But let’s make it a little more interesting and do it up with a crumble and in bar form.

This recipe is packed with fresh summer blueberries, loaded up with a smooth yet chunky blueberry jam, and topped with a cinnamon vanilla, crumb. Oh and did I mention the crust?! Also a crispy, crumbly mixture. It’s fruity, it’s lemony, it’s so delicious.

Even though today is rainy, the sun did break through for a bit. So I sat on my deck and tanned for a while. Then I got back to some more cooking because another storm came through. BUT when the storm ended, a beautiful rainbow and sunset came through. It ended up being a pretty gorgeous night out, minus the fact that everything was soaking wet outside.

But either way, we had these sweet and yummy blueberry pie bars to end a summer Friday !! Happy weekend guys !!


Ingredients

  • 2 cups flour

  • 3/4 cup light brown sugar

  • 1/2 teaspoon salt

  • 1 cup butter

  • 1/4 cup sugar

  • 1 teaspoon cinnamon

  • 1 1/2 cups fresh blueberries

  • 1 teaspoon corn starch

  • 2 teaspoons vanilla extract

  • zest of 1 lemon

  • 1/2 cup blueberry jam

Directions

  1. Preheat the oven to 350 degrees and grease an 8x8 inch baking dish.

  2. In a large bowl, beat the flour, brown sugar, salt, and butter using a hand mixer until a crumbly dough forms. Press half of the dough into the bottom of the prepared baking dish. To the remaining half of dough add the sugar and cinnamon.

  3. In a small bowl, add the blueberries, corn starch, vanilla, and lemon zest. Toss to combine. Top the dough with the berries. Spoon the blueberry jam over the berries. Top with the remaining dough mixture.

  4. Transfer to the oven and bake for 50 - 55 minutes or until crumble top is golden. Let bars cool completely before cutting.
