Spinach Bacon Pasta Creamy Ricotta Sauce

Spinach Bacon Pasta with Creamy Ricotta Sauce. Sunday is all about sauce...decadent pasta sauce. Because everyone needs a little comfort on Sunday’s and Italians know Sunday is for pasta. This sauce is simple but it’s delicious, loaded with thick cut bacon and fresh spinach leaves. Serve with a little bit of wine too... or a lot a bit of wine because the Sunday scaries require wine, you know?!

I will be the first to admit that Sunday’s are not my favorite day of the week. But that is why we need good dinners and good wines because that is about the only thing that helps cure my scaries. Sunday’s are always about pasta, and this one is a totally decadent, super comforting dish.

I wanted to do a pasta with bacon this Sunday. My first thought was Carbonara. But then I was thinking, why not change it up a bit and do a creamy sauce with bacon instead. Add a little spinach for color and flavor. Do a ricotta based cream sauce. Perfect Sunday scaries cure. I mean…guys, it’s kind of hard not to love an simple bacon cream sauce pasta.

How do you guys cure the Sunday scaries?! I am totally open to all tips and tricks ;) !!


Ingredients

  • 10 ounces thick cut bacon; cut into 1 inch pieces

  • 1 garlic clove, minced

  • 1/2 onions; finely chopped

  • 10 ounces baby spinach

  • 1 cup heavy cream

  • 15 ounces ricotta

  • 1 pound pasta

Directions

  1. In a large skillet, cook the bacon until crispy. Add the garlic and onion. Stir for a few minutes. Add the spinach and stir until wilted. Add the cream and bring to a boil. Add 1/2 the ricotta and stir until combined. Season with salt and pepper.

  2. Cook the pasta and drain, saving 1 cup of pasta water. Add the pasta to the skillet, adding pasta water as needed. Top with remaining ricotta. Sprinkle with pepper and serve.
