Potlatch Salmon with Avocado Tomato Salsa

Potlatch Salmon with Avocado Tomato Salsa. It’s grilling season once again so enter this grilled Potlatch salmon. Marinated  in Potlatch seasoning topped with spicy avocado tomatoes salsa served alongside a Potlatch Crema and Avocado Ranch. Bursting with tropical colors and flavors and has us loving this 70 degree weather !!

The weather is beautiful, tomorrow is my dads birthday, and we’re enjoying this summery salmon at the beach house tonight. To say my mood is quite happy is certainly an understatement. The summer feels are definitely in the air and that makes me more than happy.

This salmon is the perfect meal for a warm weather night. It’s simple and it’s summery. Smothered in potlatch seasoning then grilled and topped with avocado and tomato salsa. This taste just reminds me of summer because we always make grilled potlatch salmon when the weather turns warm.

Anyone else as excited for grilling season as we are?! I can’t wait for all the warm weather grilled dinners that are right around the corner !!


Ingredients

For the Salmon

  • 2 pounds Faroe island salmon

  • 1/3 cup olive oil

  • 1 heaping tablespoon William Sonoma potlatch seasoning

For the Avocado Tomato Salsa

  • 2 cups cherry tomatoes

  • 1 avocado; diced

  • juice 1 lime

  • fresh parsley; chopped

  • 1 jalapeño; seeded and sliced

  • salt and pepper

For the Potlatch Crema

  • 1 cup sour cream

  • 2 teaspoons William Sonoma potlatch seasoning

Directions

  1. Mix the olive oil and potlatch seasoning in a small bowl. Place the salmon in a large baking dish. Drizzle with olive oil and potlatch seasoning. Marinate for 1 hour.

  2. While salmon is marinating, make the avocado salsa. Mix all ingredients in a medium bowl and set aside. To make the Potlatch Crema, mix the sour cream and potlatch in a small bowl and set aside.

  3. Heat your grill on medium-high heat. When hot, place the salmon skin side up and cook for 5 minutes. Flip over and continue grilling until cooked through.

  4. Serve topped with salsa and crema on the side.
