Pasta Pomodoro with Blue Cheese

Pasta Pomodoro with Blue Cheese. Sunday sauce is back and today we’re putting a twist on your classic pomodoro adding blue cheese. Topped with cherry tomatoes, fresh basil leaves, and lots of fresh cracked pepper. It’s the Sunday comfort food you need to cure the scaries !!

It’s Sunday and you guys know by now that means pasta because there are definitely scaries today. I am super sad to see this weekend go, but I am also so excited for the upcoming Mother’s Day weekend. We have more celebrations and exciting dinners planned for the weekend. So that is definitely what is going to be getting me through this work week.

Before I get too ahead of myself and jump to next weekend, let me just talk about how beautiful today is. The weather could not be more perfect, so today we went for an easy dinner so we could spend some time in the sun. I sat outside in the backyard this afternoon and getting to feel the sunshine was incredible. Fingers crossed that the weather for Mother’s Day is just as perfect as today.

Anyway, while this pasta is simple and easy, it is still so so good. It’s a classic Sunday sauce that you really cannot go wrong with. And today we decided to add a little extra goodness with the fresh cherry tomatoes, basil, and blue cheese.

The blue cheese definitely gave this dish a fun flavor and the cherry tomatoes and basil added a little bit of freshness. Happy Italian Sunday guys !! Cheers !!


Ingredients

  • 2 (26 ounce boxes) Pomi chopped tomatoes

  • 1 onion; sliced

  • 1 stick butter

  • salt to taste

  • 1 cup fresh basil leaves

  • 10 onces cherry tomatoes; halved

  • 4 ounces blue cheese

  • 1 pound pasta

Directions

  1. In a medium saucepan, add the tomatoes, onion, butter, and salt. When the sauce starts to bubble, stir and reduce heat. Cover and simmer for 30 - 40 minutes or until the butter separates from the tomatoes. Turn off the heat. Add half the basil.

  2. Meanwhile cook the pasta. Drain and toss with the tomato sauce and the remaining basil. Serve topped with cherry tomatoes and blue cheese.
