Irish Corned Beef Tacos

Irish Corned Beef Tacos. Since it’s st paddy’s day this week and I’m half Irish we had to celebrate with a little something festive. These corned beef tacos are totally different than any taco we’ve ever done before. Topped with creamy cabbage and jalapeños for a liiiittle spice. And it’s taco Tuesday so we couldn’t resist…oh and don’t forget the Guinness ;)))

It’s St. Paddy’s Day week and taco Tuesday. So you know we had to celebrate two in one with these super fun and festive tacos. Plus, they’re super unique because have you ever thought to make an Irish themed taco? I would guess probably not.

So here you have it…we’re bring our half Irish heritage to taco tuesday with a little corned beef taco. Topped with creamy cabbage Cole slaw and jalapeño. The jalapeños bring the spice and the creamy slaw is the perfect cool down. All layered onto a crispy charred tortilla for the most unique taco tuesday yet.

Anyway, what are you guys thinking for St. Paddy’s day this year?! It’s on a thirsty Thursday…any big plans?! To be honest st. Paddy’s day has never been my favorite holiday…but we always know how to make it fun. And were starting the celebrations early with festive foods this week. So stay tuned !!


Ingredients

  • 2 - 2 1/2 pounds corned beef with spice packet

  • 1/2 teaspoon mustard powder

  • 1/4 teaspoon garlic powder

  • corn tortillas; charred

  • 1 jalapeño; sliced

  • thousand island dressing for serving

  • 1 head cabbage; shredded

  • 2 carrots; sliced julienne style

  • 1 cup mayonnaise

  • 3 tablespoons sour cream

  • 2 tablespoons cider vinegar

  • salt and pepper

  • 1 tablespoon tabasco

Directions

  1. In a roasting pan, add the corned beef. Sprinkle with the spice packet, mustard powder, and garlic powder. Add about. 1 inch of water. Cover and bake for 2 hours in a 350 degree oven or until corned beef is tender. Uncover and increase oven to 400 degrees and bake for another 20 - 30 minutes. Remove from oven and let cool slightly. Shred the beef with a fork.

  2. Make the creamy cabbage. Mix the cabbage and carrots in a large bowl. In a small bowl, whisk the mayonnaise, sour cream, vinegar, salt, pepper, and tabasco. Pour 3/4 of the sauce over the cabbage and carrots. Toss to combine. Save the remaining sauce for serving.

  3. Assemble the tacos. Layer the tortillas with corned beef, creamy cabbage, and jalapeños. Serve drizzled with thousand island dressing.
