Creamy Ricotta Pasta with Arugula & Bacon

Creamy Ricotta Pasta with Arugula & Bacon. Nothing like a mid week pasta pick me up. And what more do you need to hear than creamy ricotta, thick-cut bacon, and tangy arugula. Topped with lots of fresh cracked pepper and extra arugula. Perfect for a spring Wednesday !!

It’s always the season for pasta. But now that it’s spring I am all for the vibrant colorful pasta dishes that give me alllll those springtime vibes. This one does just that with the arugula and creamy ricotta sauce. First off, there is nothing not to love about a creamy, cheesy sauce on pasta. But when you add that thick-cut bacon and tangy arugula it gives the dish the perfect spring pop of color and flavor.

And when it’s the middle of the week sometime pasta is the only way to make it through. And now that the week is almost over, I am of course looking forward to the weekend.

We are planning to go down the shore this weekend and I am praying for some nice weather to maybe get a little bit of a tan and do a little bit of grilling. Because after all it is the kick off of grilling season. And there is no better place to celebrate the start of grilling season than the beach !!

Ingredients

  • 10 ounces thick cut bacon; cut into 1 inch pieces

  • 1 garlic clove, minced

  • 1/2 onion; finely chopped

  • 10 ounces arugula

  • 1 cup heavy cream

  • 15 ounces ricotta

  • 1 pound pasta

Directions

  1. In a large skillet, cook the bacon until crispy. Add the garlic and onion. Stir for a few minutes. Add the arugula and stir until wilted. Add the cream and bring to a boil. Add 1/2 the ricotta and stir until combined. Season with salt and pepper.

  2. Cook the pasta and drain, saving 1 cup of pasta water. Add the pasta to the skillet, adding pasta water as needed. Top with remaining ricotta. Sprinkle with pepper and serve.
