Chile Butter Fried Eggs with Whipped Goat Cheese. Palm Sunday is a day for brunch. This one is a little spicy, a little herby, and even a little tangy. The spicy fried eggs and the salty goat cheese are perfect for dunking crusty bread. Then pair it all with a lemony spinach and herb salad. It’s refreshing and delicious and the best way to celebrate Palm Sunday !! Oh but don’t forget the mimosas !! ;)
On Palm Sunday we typically go to Church and then go to brunch. That past two years have been a little out of the ordinary for that tradition. Last year it was the start of quarantine, so no church and no brunch. This year, we spent the weekend at the beach and decided we wanted to do a homemade brunch and enjoy the new house. So here’s to some new Palm Sunday traditions !!
We usually go to Parc in the city for Palm Sunday. That is one of our all time favorite brunch spots. Instead of Parc, today we made these Chile Butter Fried Eggs with Whipped Goat Cheese. My friend texted me after seeing the post and told me this dish looked like it was from Parc, so I guess you can say we are still trying to keep that tradition somewhat alive. I told her I was quite happy with that compliment :) !!
This egg dish is simple, but it’s packed with flavors and loaded with spring ingredients. The Chile Butter gives it a little kick with the spice. The creamy whipped goat cheese makes it a little salty and is perfect for dunking crusty bread. The lemony spinach and herb salad gives it a springtime taste and feel. It’s easy, it’s fun, and it’s so so yummy.

Ingredients
1/3 cup goat cheese
1/4 cup plain greek yogurt
1/3 cup + 2 tablespoons olive oil
4 eggs
5 ounces baby spinach
salt and pepper
2 tablespoons lemon olive oil
1 cup herbs (we used basil and dill)
1 English cucumber; sliced
2 tablespoons butter
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
toasted bread for serving
Directions
To make the whipped goat cheese. In the bowl of a food processor, add the goat cheese and yogurt. Pulse until smooth and creamy.
In a medium skillet, heat 1/3 cup olive oil over medium heat. When the oil shimmers, add the eggs and season with salt. Fry the eggs to your liking and transfer to a plate. Set aside.
In the same skillet add the spinach, season with salt and pepper, and cook for about 2 minutes or until greens are just wilted. Transfer to a small bowl and toss with the lemon oil, herbs, and cucumber.
In a small sauce pan, melt the butter with 2 tablespoons of olive oil, red pepper flakes, and paprika.
Serve eggs over whipped goat cheese. Top with greens and chile butter. Pair with toasted bread.
