Lemon & Swiss Chard Lentil Soup

Our first ever post for our Instagram and blog was this soup recipe! As we were inspired by so many creative cooks and bloggers on various platforms, we too decided that we too could create a blog that may soon inspire others.

This is soup is perfect for a spring or summer night especially if the weather is a little chilly out. It is light, healthy, and delicious. In our house Monday is always soup night! We are always trying to consistently think of new and exciting soup recipes! Yet, we still have so classics especially some old Italian soup recipes that we can’t wait to share with everyone in the future!

This soup instantly saw love from the small following we had on Instagram. Many of our relatives and family members saw this post and immediately asked to have the recipe! We hope you all enjoy this perfect summer soup as much as we did! Check out the recipe below!


a.     Ingredients:

  • 1 cup of brown lentils rinsed

  • ¼ cup of extra virgin olive oil

  • 1 shallot diced

  • 4 cups of chicken broth

  • 2 cups of vegetable broth

  • 10 oz bag of spinach or a green mix such as swiss chard or kale

  • Juice of 2 lemons

  • Pinch or more of crushed red pepper flakes


a.     Directions:

                                               i.     Warm the olive oil in a large pot

                                             ii.     Add the shallot; sprinkle with salt and pepper

                                            iii.     Sautee for 3 minutes

                                            iv.     Add the greens and red pepper; cook for additional 3 minutes until soft

                                              v.     Add the lentils and broths to the pot and bring to a boil

                                            vi.     Cook uncovered for 30 minutes until the lentils are tender; if lentils get too dry add more stock or water

                                           vii.     Before serving squeeze the lemons in the pot and stir
