Creamy Cauliflower Soup
This Cauliflower Soup recipe has all the perks of a creamy and delicious soup without the cream! It is a healthy yet absolutely delicious soup. The creamy texture of the soup comes from a mixture of pureed cauliflower, vegetable stock, and potatoes.
We made this soup on a Monday night in June for Monday soup night! We always love a healthy and refreshing soup recipe on Monday’s after a weekend of cocktails and decadent foods! This soup is a perfect go-to if you are looking for something light. While it is a light soup, it still has the creamy delicious taste of a heavy cream soup which makes it perfect because you get healthy and creamy all in one!
a. Ingredients:
1 large head of cauliflower; florets cut off and roughly chopped
1 large potato; peeled and diced
1 medium onion; roughly chopped
1 garlic clove; chopped
2 cups of whole milk
2 cups of vegetable stock
Salt and pepper to taste
Thyme for garnish
Olive oil for garnish
a. Directions:
Place all ingredients in a large pot over high heat and bring to a boil; turn the heat down to low and simmer for 20-25 minutes or until the cauliflower is very soft
Using an emersion blender, blend the soup until smooth adding salt and pepper to taste
You may add milk or stock if the soup is too thick
Serve garnished with fresh thyme and olive oil
