Asparagus Soup
Asparagus Soup has always been a staple soup recipe in our house since I can remember. I remember falling in love with this dish from the very first time I had it. It is light, delicious, and comforting. There are also so many variations you can make with this soup. Whether you choose to add some crispy bacon, croutons, or cooked rice, this dish is always a satisfying one.
We like to make our asparagus soup with cooked brown rice. It makes the soup more hearty and the rice pairs very nicely with the pureed asparagus mixture. a. Ingredients:
2 tbsp of butter
½ of an onion; chopped
1 tbsp of flour
2 pounds of asparagus; chopped into 1 inch lengths
Four 14.5 oz cans of chicken stock
1 tsp of ground savory
1 tsp of salt
b. Directions:
Melt the butter in a medium stock pot; add the onion and cook for approximately 3 minutes; sprinkle the flour over top and stir quickly with a wooden spoon
Slowly add in the chicken stock, stirring; add the asparagus; add the salt and the savory; bring to a boil then reduce heat to low letting simmer for 45 minutes
Remove pot from the heat and puree the soup with an emersion blender
Taste and adjust seasonings (you may add bacon, croutons, and/or cooked rice to the soup)
