Brussels Sprout Skewers with Tomato & Bacon. ‘Tis skewer season and Mother’s Day weekend !! So you know there needs to be a fun appetizer or side dish on the menu. These are super fun, summery, and vibrant. You’ve got the Brussels sprouts, the blistered tomatoes, and the crispy bacon all drizzled with a basil pesto. Tonight is shaping up to be the perfect Saturday night before Mother’s Day. Despite the terrible forecast that was predicted, the sun is shining, the margaritas are chilling in the fridge, and happy hour is about to begin. OH AND we have these delicious skewers in the oven ready to go for tonight’s dinner.
Mother’s Day weekend is all about fun, springtime eats and drinks. These skewers definitely fit into that category. And they are super simple to make. Tonight we are having steak, grilled teriyaki shrimp, potatoes, and these fun skewers. It is the perfect grilling meal at the beach.
These skewers are also the perfect vegetable side dish for a surf and turf dinner. They’ve got the blister tomatoes, thick-cut bacon, crispy sprouts…a little basil pesto on the side. Easy, simple, and delicious for a beachy Mother’s Day weekend night !!

Ingredients
12 ounces Brussels sprouts; halved
10 ounces cherry tomatoes
1/2 pound bacon; halved
4 tablespoons olive oil
salt and pepper
fresh basil leaves for topping
For the Basil Pesto
2 cups of fresh basil leaves
2 cloves of garlic
1/3 cup of walnuts or pine nuts
1/3 cup of fresh grated Parmesan-Reggiano
1/3 cup olive oil
Directions
Assemble the skewers. Thread the bacon, Brussels sprouts, and tomatoes onto skewers. Drizzle with olive oil and sprinkle with salt and pepper. Roast in a 400 degree for 30 minutes or until bacon is cooked through.
Meanwhile make the basil pesto. In the bowl of a food processor, add the basil, garlic, nuts, and cheese. Process and drizzle in the olive oil until smooth.
Serve skewers drizzled with pesto and topped with fresh basil leaves.
