Potlatch Salmon with Pan Seared Broccoli & Tomatoes. Our favorite way to make salmon…with William Sonoma Potlatch seasoning and paired with saucy, herby pan seared broccoli, tomatoes, and olives. It’s the perfect way to end the first week of the year…cheers to almost Friday !!
I am so SO happy to have the first week of the year behind us. Not that I am unhappy about it being 2022, but the first week back to work after the holidays is always so rough. And to celebrate the end of the week we are celebrating with my favorite…salmon.
This salmon is super simple but so delicious, and you guys probably know by now that one of our favorite ways to make salmon is with potlatch seasoning. So this salmon is pan seared and smothered in all that delicious potlatch. Surrounded by pan seared broccoli, cherry tomatoes, and katamala olives.
Also with the new year comes new recipes and we have tons coming for you guys !! Some healthy for January, some not so healthy ;)) because we still need some decadent foods to make January a liiiiittle more exciting !! Cheers !!
Ingredients
1 1/2 pound piece salmon
1/4 cup olive oil; divided
2 teaspoons potlatch seasoning
1 head broccoli; cut into florets
1 cup cherry tomatoes
2 tablespoons fresh marjoram
salt and pepper
1/3 cup white wine
1/2 cup pitted mixed olives
Directions
Drizzle the salmon with 2 tablespoons of olive oil and sprinkle with potlatch seasoning. Rub the seasoning into the salmon.
In a large skillet, heat the remaining olive oil over medium-high heat. Add the salmon, flesh side down and sear for about 4 - 5 minutes until caramelized. Remove the salmon and set aside.
Add a drizzle of olive oil to the skillet. Add the broccoli and sear until tender for about 5 - 7 minutes. Add the tomatoes, marjoram, salt, and pepper. Cook until the tomatoes start to burst. Add the wine and the olives. Cook for 1 - 2 minutes. Slide the salmon back into the skillet.
Transfer to a 400 degree oven for 10 - 15 minutes or until cooked through.
