Herby Swordfish & Salmon Skewers

Herby Swordfish & Salmon Skewers. Embracing all the summer vibes and grilling up some seafood and veggie skewers. Salmon and swordfish paired with zucchini, summer squash, and red bell peppers. Marinated in herby olive oil and paired with a Lemon Crema. Because grilling is always more fun when skewers are involved and maybe some cocktails too ;)) !!

Well it is finally here…my favorite day of the week. I absolutely love Thursdays, especially Thursday nights because it is the official start to my weekend. As some of you may already know by now, my company is on a 4/10 schedule which means we work 4 days a week instead of 5. So Thursday nights are basically my Friday. But aside from that, I also having been loving Thursdays recently because it means back to the shore.

Tonight we are firing up the grill and doing some fun, summer skewers. They’re so vibrant, colorful, and most importantly delicious. You can obviously do skewers so many different ways, but we love a good seafood and veggie combo. We use zucchini, summer squash, and red bell pepper for our veggies. For the fish, we like to do a combo of swordfish and salmon. Both fishes are perfect for skewers. Then we marinate it all in herby olive oil and white wine and serve them alongside a tangy Lemon Crema.

And for cocktails…well we’ve got a variety, but tonight I am having a rum and orange juice. It's the perfect tropical drink to pair with these fun skewers. So cheers to another summer weekend and being back in my happy place !!


Ingredients

  • 2 - 3 (6 ounce) salmon filets; cut into chunks

  • 1 pound swordfish filet; cut into chunks

  • 1/3 cup olive oil

  • 1/3 cup white wine

  • 1/4 cup fresh oregano leaves

  • salt and pepper

  • 1 zucchini; sliced

  • 1 yellow squash; sliced

  • 1 red bell pepper; chopped

  • fresh basil leaves for topping

Lemon Crema

  • 1 cup sour cream

  • juice of 1 lemon

  • salt and pepper

Directions

  1. Season the salmon and swordfish with salt and pepper. Marinate in the olive oil, white wine, and oregano for about 1 hour.

  2. Assemble the skewers. Thread the veggies, swordfish, and salmon on skewers. Repeat until all ingredients are used up.

  3. Heat the grill on medium heat. Cook the skewers 5 - 7 minutes per. Serve topped with fresh basil and alongside Lemon Crema.
