Grilled Salmon with Lemony Orzo Salad

Grilled Salmon with Lemony Orzo Salad. Summer is so so close guys which means so is grilling season. I love love love a good grilled salmon and this one is perfect for the season. Paired with a refreshing orzo salad loaded with tomatoes, cucumber, avocado, chickpeas, roasted peppers, and herbs topped with feta. How is everyone else celebrating spring and the weekend ?!

Nothing is better than a summery grilled salmon right around the time that the weather breaks. I absolutely love salmon especially in the spring and summer when it can be grilled. This one is loaded with summer vegetables, salty from the feta cheese, and a little tangy from the lemony flavor.

The orzo salad is light and fresh. The salmon is crispy and charred. It is the perfect combination of flavors. And the best part?! Tomorrow is FINALLY spring, so we are breaking out all the fun springtime dinners. Ok..maybe we started bringing out the spring dishes back in February, but let’s just say it’s been a long time coming !! Happy Spring…almost !!


Ingredients

For the Salmon

  • 4 (6 ounce) salmon filets

  • 2 teaspoons smoked paprika

  • 2 tablespoons fresh oregano

  • 1 shallot; chopped

  • salt and pepper

  • 6 tablespoons olive oil

  • juice 1 lemon

For the Orzo Salad

  • 1 pound orzo; cooked

  • 1/2 cup olive oil

  • 3 tablespoons fresh basil; chopped

  • 2 tablespoons fresh dill

  • 2 tablespoons chives; chopped

  • 1/3 cup roasted red peppers; chopped

  • 1 (14 ounce) can chickpeas; drained

  • 10 ounces cherry tomatoes; halved

  • 1/2 cup green olives

  • 1 large English cucumber; chopped

  • 1 avocado; chopped

Directions

  1. In a baking dish, add the olive oil, paprika, oregano, shallot, salt, and pepper. Add the lemon juice. Marinate the salmon pieces for about 30 minutes.

  2. Meanwhile make the Orzo Salad. Add all the salad ingredients to a serving bowl and toss to combine. Set aside while salmon is cooking

  3. Heat your grill to medium heat. Cook the salmon flesh side down for 4 - 5 minutes. Flip over and cook another 3 - 4 minutes until salmon is cook through. Serve alongside Orzo Salad.
