Grilled Cod with Mango Avocado Salsa

Grilled Cod with Mango Avocado Salsa. I guess I just can’t decide what season I am vibing with this week. Today it’s summer…tomorrow who knows. But either way if you thought the mango salsa was gone for good, it definitely is not. And I know you’re probably thinking you’ve seen a variation of this dish before, but is there anything better than a simple, light and flaky, grilled white fish?! Topped with a sweet and spicy salsa?! Garnished with a little basil?! Honestly I don’t think so !!

I know, I know, I am probably really confusing you guys with my seasons this week. I guess I really can’t decide if I am feeling end of summer still or start of fall. Honestly, I am probably going to flip flop back and forth a few times before I finally settle into fall. But can you guys blame me?!

I mean aside from the fact that summer was absolutely amazing for me this year and I am still holding on, the summer ingredients we all know and love are still totally in season. So, why not get the last of them while we still can.

So tonight it is a mango salsa and seafood night. I am definitely not letting go of my favorite seafood topping just yet. And tonight I needed a simple, easy dinner to make. Enter, this amazingly simple and easy grilled cod. The ingredients are simple, the preparation is simple. It comes together in minutes, so like I said it is so so easy for a weeknight dinner.

But what makes this fish so good is the salsa in my opinion. You’ve got the sweet, the savory, and the spicy. And I love this salsa because you can literally put it on any seafood dish and bring it to a whole new level !!

Ingredients

  • 1 1/2 pounds cod

  • 2 - 3 tablespoons olive oil

  • juice of 1 lemon

  • salt and pepper

  • fresh basil leaves for serving

For the Mango Avocado Salsa

  • 2 mangos; diced

  • 2 avocados; diced

  • 2 jalapeños; seeded and diced

  • juice of 1 lime

  • 2 tablespoons orange juice

  • salt and pepper

Directions

  1. In a grill safe baking dish, drizzle the cod with the olive oil and lemon juice. Sprinkle with salt and pepper. Heat the grill to medium heat and cook for 15 minutes or until cooked through.

  2. To make the salsa. In a medium bowl, add the mango, avocado, jalapeño, lime juice, and orange juice. Season with salt and pepper. Toss to combine.

  3. Serve cod topped with mango avocado salsa and basil leaves.
