Flakey Grilled Black Bass with Tomato Basil Salad

Flakey Grilled Black Bass with Tomato Basil Salad. The most simple summer recipe to throw on the grill and enjoy. Flakey white fish marinated in the simplest of ingredients, grilled until lightly charred and crispy, and topped with a refreshing tomato, basil, arugula salad. Quick and easy but of course still delicious ;) !!

Only one more day until I am back in my happy place!! Ok, I feel like I have been giving you guys a day by day countdown of when I will get back to the beach, but I honestly can’t help my excitement with how amazing the weather is looking for this weekend.

But for now we are here and on the grill tonight because it is SUPER hot out today. I am talking like 90 degrees which is a bit hot for May around here. But I am so not complaining about it. So with this hot weather we needed something light and refreshing. This fish is definitely super light and flaky, it’s perfect to throw on the grill, and it pairs great with a simple, summery salad on top.

We are basically in full on summer mode with the recipes we have been posting lately. I am totally loving it. There is nothing like warm weather recipes with so much color and so much flavor. The possibilities for creative recipes in the summer are basically ENDLESS.

Ingredients

  • 1/2 cup olive oil; divided

  • juice of 2 lemons

  • salt and pepper

  • 10 ounces cherry tomatoes; halved

  • 1 cup fresh basil

  • 2 cups arugula

Directions

  1. Marinate the fish in 1/4 cup of olive oil, juice of 1 lemon, salt and pepper for 1 hour.

  2. Heat the grill to medium heat. Place a grill pan on the rack and spray with oil. Place the fish on the grill pan and grill for 4 minutes. Flip over and grill for another 3 minutes until cooked through. Carefully remove fish to a serving platter and set aside.

  3. Make the Tomato Basil Salad. In a medium bowl, place the tomatoes, basil, and arugula. In another small bowl, whisk the remaining 1/4 cup of olive oil, juice of 1 lemon, salt and pepper. Drizzle over the salad and serve alongside fish.
