Crab Ceviche
Crab Ceviche. Lump crab meat, avocado, tomatoes, yellow bell pepper, jalapeño, scallions, lime juice…all loaded in one big bowl of goodness. AND wonton chips for dunking. AND a lime Crema for dipping. So refreshing and delicious for hot summer nights at the beach. And making Monday a little less scary, cheers !!
Tonight I am at the beach, so to make working from home from the beach on a Monday a little better than you’re average Monday, I am making a summery seafood ceviche. It’s loaded with tons of lump crab meat, creamy avocado, colorful cherry tomatoes, yellow bell pepper, and spicy jalapeños. Then I gave it some flavor with lime juice, salt, and pepper. It’s simple…yes, but it is so so good for beach nights with a cold glass of wine. Or maybeee a marg even though it’s only Monday. You gotta do it up when you’re at the beach, am I right?!
I was actually planning on making this ceviche over the weekend, but we had WAY too much food every night. Typical of us I know. So, I decided I would save it for one night this week, and tonight I was totally in the mood. And the key to serving this ceviche or any ceviche in my opinion, a crispy chip…specifically wonton wrapper chips. We have been super into the wonton chips this summer and trust me, once you try them you will totally know why. I also decided to have this ceviche with a little Crema on the side. Nothing like a cool refreshing Lime Crema with a seafood recipe to take the whole thing to the next level.

Ingredients
1 avocado; diced
1 jalapeño; diced
1 yellow bell pepper; diced
10 ounces cherry tomatoes; halved
1 bunch scallions; sliced
1/2 pound lump crab meat
juice of 1 lime
salt and pepper
wonton wrappers; cut into triangles
1 cup canola oil for frying
For the Lime Crema
Directions
In a large bowl, add the avocado, jalapeño, pepper, tomatoes, scallions, and crab meat. Add the lime juice. Season with salt and pepper. Toss to combine.
Heat the canola oil in a medium skillet until very hot. Fry one wrapper at a time until golden on one side. Flip over and fry for an additional 10 seconds.
Make the Lime Crema. In a small bowl, combine the sour cream, lime juice, salt, and pepper.
Serve ceviche alongside fried wonton wrappers and Lime Crema.
