Summer is all about the skewers and fathers day weekend is all about the grilling. So we decided to throw some skewers on the grill to help celebrate fathers day weekend. And these salmon skewers are perfect and easy for Friday night grilling.

The salmon is smothered in a bacon jam then threaded on skewers between thick-cut applewood bacon, zucchini, yellow squash, and red bell pepper. These not only have all the colors of summer but they also have all the flavors of summer. And like I said they’re easy which is exactly what you need when it’s nice out and you want to enjoy the weather.

We also paired these skewers with a dipping sauce…because you know I can’t have salmon without a sauce. So we mixed some sour cream with the bacon jam and it was all just the perfect combination of flavors. I am pretty much addicted to this skewer combo.

Anyway I am going to get back to my rum and orange juice now...had to pair these fun summery skewers with my favorite tropical summer drink of course !! Ingredients

  • 3 (6 ounce) Secret Island Salmon filets; cut into cubes

  • 1/2 pound bacon; sliced in halves

  • 1 zucchini; sliced

  • 1 yellow squash; sliced

  • 1 red bell pepper; sliced

  • 1/2 cup + 1 tablespoon bacon jam

  • 2 tablespoons olive oil

  • salt and pepper

  • 1 cup sour cream

  • basil leaves for serving

Directions

  1. Assemble the skewers. Thread the skewers with the salmon, bacon, zucchini, squash, and pepper. Repeat until all ingredients are used up. Spread a 1/2 cup of the bacon jam over the skewers and drizzle with the olive oil. Season with salt and pepper and let marinate.

  2. In a small bowl, add the remaining tablespoon of bacon jam and sour cream. Stir to combine.

  3. Heat the grill on medium heat. Cook the skewers 5 - 7 minutes per, turning frequently. Serve topped with fresh basil and alongside bacon jam sauce.
