Surf & Turf Sandwich

Surf & Turf Sandwich. Lobster & filet sandwiched between thick-cut toasty grilled bread. With a mustard sauce smothered on the slices of bread and spinach and dill in the middle. The perfect grilled summer sandwich for better weather season !!

‘Tis the season for grilling…but make grilling steak and seafood even more fun by serving it up as a delicious sandwich. This one is super fun for summer. Surf and turf…so you’ve got the filet and the lobster tail…both grilled to perfection. Then add some spinach and dill. And finally smother a delicious old bay mustard sauce over the slices of bread…SO good.

This one is also super easy to make. Most of the cooking is just grilling up the steak, lobster, and bread. Pretty much everything else is just assembling the sandwich. So delicious, decadent, goodness in just minutes. And who doesn’t love a fancy sandwich?!

Today is a little cloudy and chilly at the beach, but we were luckily still able to grill. The sun did break out right before dinner though, so we got to see a pretty beautiful sunset. And then of course, we enjoyed this super delicious sandwich !! Happy Saturday guys !!


Ingredients

  • 4 (6 ounce) lobster tails

  • 2 tablespoons clarified butter

  • salt, pepper, and paprika

  • 8 slices thick-cut bread

  • olive oil for drizzling

  • 3 (6 ounce) filet mignon steaks

  • 1 cup mayonnaise

  • 2 tablespoons dijon mustard

  • 1 teaspoon old bay

  • spinach

  • dill

  • fresh basil leaves

Directions

  1. In a grill pan, add the lobster tails. Drizzle 1/2 tablespoon of clarified butter on each lobster tail. Sprinkle with salt, pepper, and paprika. Grill over medium heat for about 10 minutes or until cooked through. Remove the lobster meat from the shell and set aside.

  2. Drizzle the bread with olive oil. Sprinkle with salt and pepper. Grill over medium heat until charred and toasted on each side.

  3. Rub the steaks with the remaining 3 tablespoons of olive oil. Season with salt and pepper. Grill for 3 - 4 minutes on each side for medium-rare. Remove from grill and thinly slice.

  4. Make the mustard sauce. In a small bowl, add the mayonnaise, dijon mustard, and old bay. Stir to combine.

  5. Assemble the sandwiches. Spread the mustard sauce on 4 of the slices of bread. Layer with sliced steak, spinach, dill, and lobster. Top with another slice of bread. Serve topped with fresh basil leaves.
