Salmon BLTs

it’s not a patriotic holiday weekend until we've constructed the perfect sandwich. And a BLT in the summer on a holiday weekend is always a good idea. This one is a BLT, but it’s an elevated BLT. Because it is loaded and layered with a grilled scallion mayo, romaine lettuce, heirloom tomatoes, crispy applewood bacon, AND grilled salmon smothered in a bacon jam. Garnished with a little fresh basil and sprinkled with flaky sea salt.
I don’t know about you guys, but I am always looking for ways to make a decadent BLT and this might just be my favorite yet. I love BLTs so any way that I can make them fancy, decadent, and even more delicious always gets me so excited. And seafood in the summer is the perfect way to elevate your BLT.
And in my opinion, holiday weekends always need fun foods like this. These sandwiches were one of my favorite foods of the weekend so far. But it’s only Friday, so you’re going to have to stay tuned for the rest of our weekend eats !! Saturday is farmers market day…so more seafood !! Maybe another salmon dish?! We will see !! Prep Time - 30 minutes
Yields - 1 Sandwiches
Ingredients
4 (6 ounce) salmon filets
2 tablespoons olive oil
salt and pepper
4 tablespoons bacon jam
1 bunch scallions
8 slices cooked bacon
2 large tomatoes; thinly sliced
green leaf lettuce
8 sliced toasted ciabatta bread
3/4 cup mayonnasie
juice of 1 lemon
1/2 teaspoon old bay
fresh basil leaves for serving
Directions
Rub the salmon and scallions with the olive oil. Season with salt and pepper. Heat the grill over medium-high heat. Add the salmon flesh side down and add the scallions. Remove the charred scallions from the grill after 2 minutes. Continue cooking the salmon for 3 - 4 minutes. Flip over and rub with the bacon jam. Cook for another 3 minutes or until cooked through.
Make the grilled scallion mayonnaise. Chop the scallions. In a small bowl, add the mayonnaise, chopped scallions, lemon juice, and old bay. Stir to combine.
Assemble the BLTs. Layer the toasted bread with the scallion mayonnaise, lettuce, tomatoes, bacon, and grilled salmon. Top with remaining slice of toasted bread. Serve garnished with fresh basil.
