Creamed Spinach Grilled Cheese. Super thick-cut toasty bread loaded with extra creamy spinach, mozzarella, and feta cheese. Sprinkled with sea salt and topped with basil leaves. It’s the perfect buttery, cheesy, and creamy snack or appetizer or even dinner to start the weekend right !! Cheers !!
So it’s our classic creamed spinach recipe, but this time we stuffed it into a super thick and toasty grilled cheese sandwich. And I mean, come on, who doesn’t love an extra cheesy, saucy, creamy grilled cheese?! Grilled cheese is a classic and there is seriously nothing not to love about it. Especially when its this good.
But this is kind of a fancier version of grilled cheese. Because there's mozzarella and feta. There’s allllll that creamy spinach. And the bread…well…as you can see it’s super thick-cut and nice and buttery and toasty on the outside. And of course a little fresh basil for serving because basil makes everything better.
But also, can you believe we really have never shared a grilled cheese recipe with you guys. I think maybe once in like the first week of us starting this blog we posted a grilled cheese. But I mean that was way back when we had no idea what we were doing. So here you have, in my opinion, our first official grilled cheese recipe. And guys I promise this one does not disappoint.
And a little tip…save this creamed spinach recipe just to have. Because it’s so good on its own. But it makes not only the perfect grilled cheese stuffer….it’s great as a pizza topper, a side dish with fish, or honestly just about anything. You can get super creative.

Ingredients
4 tablespoons butter
1/4 cup flour
1 cup heavy cream
10 ounces fresh baby spinach
salt and white pepper
6 slices thick-cut bread; buttered on one side
12 slices mozzarella cheese
1/3 pound feta cheese
fresh basil for serving
Directions
In a large skillet, melt the butter. Stir in the flour and cook for 1 minute. Add the heavy cream, stirring constantly until thickened. Stir in the spinach and cook until wilted. Season with salt and white pepper.
Assemble the grilled cheeses. In a separate skillet, place the buttered side down. Add 2 slices of the mozzarella cheese. Spoon the creamed spinach over top. Sprinkle with feta and add 2 additional slices of mozzarella. Top with another slice of bread, buttered side up. Cook over medium-high heated until bread is browned and cheese is melted.
Serve topped with fresh basil leaves.
