This weekend was absolutely gorgeous and it turned out to be one of my favorite summer weekends so far. Not only was the weather amazing, but the vibes were just incredible. I had my close friend down the shore with me for the weekend and we had such a fun time. AND we made this salad and have honestly been snaking on it all weekend long.
This salad is the perfect appetizer, the perfect breakfast, brunch, or lunch. It’s super summery, it’s super refreshing, and it’s super easy. My mom, my friend, and I went to the farmers market bright and early to get the ingredients and to get dinner for Saturday night. Then we went to the gym and came back to throw this salad together. It was the perfect summer July morning.
We later went to the beach and got drinks at the beach bar. Then we came home and had sangria on the deck. After we showered we had our classic margs and put some clams and shrimp on the grill for appetizers. For dinner we had quite a feast. There was clams and spaghetti, ahi tuna with mango salsa, and grilled cod. We got all the seafood from the farmers market and it was so fresh and so delicious. Finally we saved some energy to go to the bars at night. It was the ideal summer Saturday and I already miss it !!
So today, I am sharing this salad from the weekend because I miss the vibes already. And since Sunday’s are scary I am sharing this salad to lighten up the mood !!
Ingredients
1 small watermelon; scooped
1 cantaloupe; scooped
1 honeydew; scooped
1 cup feta; crumbled
1/2 cup walnuts
mint leaves
For the Citrus Vinaigrette
1/4 cup fresh orange juice
1/4 cup shallot vinegar
1/2 cup olive oil
juice of 1 Meyer lemon
1 tablespoon honey
salt and pepper
Directions
In a large bowl, add the watermelon, cantaloupe, honeydew, feta, walnuts, and mint.
Make the vinaigrette. In a shaker, add the orange juice, shallot vinegar, olive oil, Meyer lemon juice, honey, salt, and pepper. Shake vigorously.
Pour the dressing over the melon mixture and toss to combine.
