Is there anything better than a salad pizza on a Friday in the summer?! So if you can’t tell by now based on our last two pizza Fridays, we are very into the salad pizza toppings right now. They’re perfect for the summer because you can use all those fun summer veggies and the salad topping keeps the pizza light and refreshing. Although I have to admit, there is nothing light about this one…it is SUPER decadent. And there is absolutely nothing wrong with that.
This crispy grilled pizza is smothered in creamy béchamel sauce…super decadent but so SO good. Then it’s topped with a radicchio salad, crispy bacon, AND a fried egg. And finally garnished with parsley and parmesan. But the key is frying the egg in the bacon grease. It makes the egg even more delicious. Break the yolk over the pizza…you guys SOOO delicious. Finally top it with a little parsley and you are ready to serve.
I think this is going to be our new go to pizza to serve to guests this summer. And honestly it may just be our go to pizza regardless of if we have guests or not because it is just that good. Pizza Fridays at the beach are just so much fun. Grilling on the deck, enjoying the pizzas outside with a cocktail and the view. My dream Friday night at the beach !! Cheers to the weekend. Ingredients
1 pizza dough; homemade or store-bought
2 tablespoons butter
2 tablespoons flour
1 1/4 cup heavy cream
salt and freshly cracked black pepper
1 head radicchio
3 tablespoons olive oil
5 slices thick-cut bacon
2 - 3 eggs
parsley and shaved parmesan for garnishing
Directions
Make the béchamel sauce. In a medium sauce pan, melt the butter over medium heat. Stir in the flour. Whisk until mixture is combined. Add the heavy cream, a little at a time continuing to whisk. Reduce the heat to low and cook until the sauce has thickened and is creamy constantly whisking. Season with salt and pepper.
In a medium bowl toss the radicchio with the olive oil, salt and pepper.
Meanwhile fry the bacon. In a large skillet, arrange the bacon in a single layer. Cook, turning once until crispy. Transfer to paper towels and let drain. Pour the bacon fat out of the skillet, leaving 1 tablespoon. Crack the eggs into the skillet and fry until whites are set but yolks are runny. Season with salt and pepper.
Spread the dough out on an oiled grill pan using your fingertips. Using a fork, pierce holes throughout. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Spread the béchamel sauce evenly over the dough. Place back on the grill for another 3 - 5 minutes until the other side of the crust is crispy.
Assemble the pizza. Top with radicchio, bacon, and eggs. Garnish with parsley and shaved parmesan cheese.
