Grilled Arugula Fig Prosciutto Pizza. This is one loaded pizza if we’ve ever seen one. Arugula, fresh figs, salty prosciutto, cherry tomatoes, basil leaves, red pepper flakes, and mozzarella cheese topped with crumbled goat cheese and drizzled with balsamic and honey. SO many flavors. It’s literally bursting with both sweet and savory. Does it get any better?! I think no. But pair with a cocktail because it’s Friday, so we’re drinking grapefruit martinis! Cheers guys!
It is the heart of January which means the heart of the cold and dreary weather in the northeast. But somehow we are still managing to get outside to grill pizzas! I guess we are just that dedicated, you know?! Sure cooking pizza in the oven works too, but for us it just doesn’t compare to a crispy, charred crust pizza hot off the grill. So for pizza Friday’s we bundle up and brave the cold to enjoy a delicious grilled pizza by the fire with cocktails later.
One of my favorite things about pizza is that there are so so so many ways to top them. Picking out a pizza each week is so much fun when the options are literally endless. We definitely like to get creative, and this one sure is different with all those sweet AND savory flavors. You’ve pretty much got it all on this pizza.
It’s extra cheesy….has plenty of salty prosciutto….loads of colorful cherry tomatoes….all the sweetness from the fresh figs….healthy greens like arugula and basil….more cheese because goat cheese is a perfect pair with these flavors….AND a heavy drizzle of honey and balsamic vinegar….
Best part….pairing them with Grapefruit Martinis because we just got a special delivery of fresh oranges and grapefruits from the sunshine state! So martinis are necessary.
We love this one, but we definitely have some more fun pizza ideas in mind for the next couple weeks! After all, it is January so we need to keep it fun, colorful, and of course delicious!
Ingredients
1 pizza dough (homemade or store-bought)
fresh basil leaves
salt, pepper, & red pepper flakes
4 ounces shredded mozzarella
8 ounces mixed cherry tomatoes; sliced
6 fresh figs; sliced
4-5 slices San Daniele prosciutto
fresh arugula for topping
2 tablespoons goat cheese
honey and balsamic vinegar for drizzling
Directions
Roll out the pizza dough. Transfer the dough to the grilling pan spraying the pan first with olive oil.
Place grill pan on medium-high grill. Grill until lightly browned (this should take about 5 minutes but keep an eye on it so it doesn’t burn). Flip the dough and sprinkle with salt, pepper, and red pepper flakes. Add the fresh basil and sprinkle the mozzarella cheese. Close grill and cook for another 4 - 5 minutes or until crust is charred and cheese has melted.
Transfer to a serving board. Sprinkle the tomatoes with salt and pepper. Add the tomatoes, figs, and prosciutto. Top with fresh arugula. Sprinkle with goat cheese. Drizzle with honey and balsamic vinegar.
