Brussels Sprout & Bacon Grilled Pizza. Another fall pizza friday with a crispy grilled Brussels and bacon pizza. I absolutely loveeee my Brussels sprouts and I love them even more on a cheesy pizza paired with bacon and drizzled with an herby honey balsamic sauce. It’s a little sweet, a little spicy, a little herby. Another amazing combination of autumn flavors…and don’t forget your friday cocktail ;)) !!
Today is another beautiful fall Friday which means more grilling pizzas. I love to grill when the weather is nice and I also love a grilled pizza. Especially one with all the favorite fall ingredients.
Brussels sprouts are one of my all time favorite vegetables. Like I am not kidding I could eat them any time, any day, anywhere. Roasted, sautéed, baked…you name it…I will eat it. I don’t know why I love Brussels sprouts so much, but I just do. And I also LOVE them on a crispy, cheesy pizza.
This pizza is simple but it’s so delicious and has all the fall flavors you need. The crispy grilled crusted is drizzled with a balsamic honey sauce that’s a combination of spicy, sweet, and herby. Then layer on all that mozzarella cheese…you can never have too much. Finally top it with all those roasted shredded Brussels sprouts and bacon. SO good.
I mean like I said it’s simple ingredients, but it gets the fall pizza done. Tonight is going to be a chill night for me. I have been going out a lot lately and needed a little bit of a break to catch up on sleep. So I am enjoying this perfect pizza with my rum and orange juice…no I can’t seem to ditch my summer cocktail just yet ;)))

Ingredients
1 pizza dough (homemade or store-bought)
1 1/2 cups Brussels sprouts; shredded
5 thick-cut slices bacon; chopped
3 tablespoons of olive oil; divided
salt and pepper
1 tablespoon honey
1 tablespoon balsamic vinegar
1 tablespoon fresh thyme leaves
red pepper flakes
4 ounces of shredded mozzarella
Directions:
On a baking sheet line with parchment paper, lay the Brussels sprout and bacon. Drizzle with 2 tablespoons of olive oil. Sprinkle with salt and pepper. Roast in a 425 degree oven for 20 - 25 minutes.
In a small bowl combine the remaining tablespoon of olive oil, honey, balsamic vinegar, thyme leaves, and red pepper flakes.
Spread the dough out on an oiled grill pan using your fingertips. Using a fork, pierce holes throughout. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Spread the balsamic honey sauce over the crust. Spread the mozzarella evenly over top. Place back on the grill for another 3 - 5 minutes until the other side of the crust is crispy.
Assemble the pizza. Top with roasted Brussels sprouts, bacon, and additional thyme leaves. Sprinkle with fresh cracked black pepper and serve.
