Tomato Basil Pesto Spaghetti
Once again I am stressing our determination to make as many summery recipes as possible before fall is in full swing! This pasta incorporates an amazing combination of summer flavors between the Jersey tomatoes, fresh basil leaves, and homemade pesto!
Throughout the summer we have tried a variety of different tomato and basil pasta dishes, but this one is so simple and so delicious we absolutely loved the outcome. We had this dish on a Sunday after coming home from a beach weekend. It was the perfect meal to unwind with since it was easy to make and super tasty. Sunday night always calls for pasta dishes and this one definitely did not disappoint!
Ingredients:
4 roma tomatoes; chopped
¼ cup of olive oil
¼ cup of water
¼ cup of fresh basil; chopped
Salt and pepper to taste
1 pint of homemade or store-bought pesto
1 pound of fresh or dry spaghetti
Directions:
In a medium-sized bowl mix the tomatoes, basil, olive oil, water, salt, and pepper; set aside
Cook the pasta until very al dente; pasta will finish cooking with the sauce
Drain the pasta saving some pasta water if needed; add back to pot and add the tomato basil mixture and pesto; add pasta water as needed until warmed through
