Tomato, Basil, & Brie Pasta. Summery pasta for Father’s Day !! One of my dads favorites is this simple creamy tomato basil and Brie pasta. It’s been a favorite in our house since I can remember and for a good reason. The Brie is creamy, the tomatoes and basil are fresh for summer. All just SO good. Happy fathers day to all the amazing dads out there !!
It’s fathers day…so how could we not make some kind of pasta?! Usually we do gnocchis because they are my dads favorite, but we decided to stay at the beach a little longer than planned, so we kind of ran out of time to make them today. So we went with the next best thing. This creamy and cheesy tomato Basil Brie Pasta.
This pasta has been a family favorite since I can remember. It’s been made for many birthdays and many holidays over the years because it’s just that good. It’s really just a mixture of tomatoes and basil tossed together with the creamy brie, olive oil, salt, and pepper. It’s so simple but that’s what makes it so good.
The brie melts when you toss it with the warm pasta and you get the creamiest and most delicious sauce. The tomatoes and basil are so fresh and perfect for summer…like I said this pasta is all around just the next best thing to the gnocchis.
It is absolutely beautiful weather for fathers day. We were at the beach this morning enjoying all the sun, and now we are home enjoying a nice bottle of wine and this pasta of course. Happy fathers day, we hope all the dads out there had a good one !!
Ingredients
4 roma tomatoes; chopped
10 ounces cherry tomatoes; halved
1 cup fresh basil; sliced
½ pound brie; cut into chunks and rind removed
1 cup olive oil
salt and pepper to taste
1 pound long cut pasta
Directions
In a large bowl, add the tomatoes, basil, brie, olive oil, salt, and pepper. Let the mixture marinate for about 1 hour.
Cook the pasta. Drain, saving 1 cup of pasta water. Add the pasta to the brie mixture. Toss to combine, adding pasta water as needed. Serve topped with additional fresh basil leaves.
