Ricotta Basil Pappardelle with Prosciutto
Ricotta Basil Pappardelle with Prosciutto. So this is like the ultimate sunday pasta dish, and since it’s Sunday that means homemades! We used our @hellocucina pasta maker and gave pappardelle a try for the first time! And the sauce is just so cozy for Sunday. It’s creamy and herby with the basil and parsley. Then you’ve got the San Daniele prosciutto. AND...the poached egg to top it all off. I mean seriously have you guys seen a more comforting dish for a chilly Sunday night?!
Sunday is the perfect day to make homemade pasta. And we have been loving trying all the different cuts of pasta. Hello Cucina has made pasta making our new Sunday tradition, so we are super happy that they sent us these great kitchen tools. With winter weather around the corner, we will definitely be continuing our weekly tradition of homemades for Sunday night!

Ingredients:
2 tablespoons butter
one 15 ounce container of ricotta cheese
1/3 cup heavy cream
1/2 cup mixed basil/parsley; chopped
salt and pepper
1/3 pound prosciutto
4 poached eggs; divided
1 pound pappardelle (store bought or homemade)
Directions:
In a large skillet, melt the butter. Add the ricotta and heavy cream. Stir until combine. Add the fresh herbs. Add salt and pepper to taste.
Meanwhile cook the pasta. Drain. Add to the skillet with the prosciutto. Toss to combine.
Divide amongst four serving bowls and top each with a poached egg.
