Pasta Pomodoro with Burrata. The simple sunday sauce that is so easy but so good. And tonight we’re serving it topped with fresh burrata…and burrata just makes every pasta dish better. Add a little bit of fresh basil and cracked black pepper and serve alongside fried dough for the perfect Sunday night situation. Oh and one more thing…Sunday isn’t Sunday without the wine to go with your pasta !!
Coming back from the shore on Sundays is always hectic. So we needed a simple, easy sauce for Sunday pasta night that still is delicious. And Pomodoro is one of those sauces that we can do up with just about anything. It’s a pasta sauce that we make so often that we need to get creative with it every now and then.
The sauce is simple. Just your basic tomato sauce. But were making this one even better by topping it with a creamy fresh burrata and basil. The burrata melts into the sauce to make for the perfect cheesy addition. And the basil adds the perfect springtime touch. Finally add some fresh cherry tomatoes and sprinkle with some cracked black pepper.
Another one of our Sunday favorites that we really haven’t made in forever is fried dough. We had a left over pizza dough from our pizza Friday, so tonight were frying it up, sprinkling it with some flaky sea salt, and pairing it with this pasta. It’s perfect to soak up all that tomato sauce.

Ingredients
2 (26 ounce boxes) Pomi chopped tomatoes
1 onion; sliced
1 stick butter
salt to taste
1 cup fresh basil leaves
10 onces cherry tomatoes; halved
4 burrata
1 pound pasta
Directions
In a medium saucepan, add the tomatoes, onion, butter, and salt. When the sauce starts to bubble, stir and reduce heat. Cover and simmer for 30 - 40 minutes or until the butter separates from the tomatoes. Turn off the heat. Add half the basil.
Meanwhile cook the pasta. Drain and toss with the tomato sauce and the remaining basil. Serve topped with cherry tomatoes and burrata.
